My mom just sent me an old recipe for a Maple Walnut Cake. The cake and icing both include "mapleine."

What is this and where in the grocery store would I find it? Is it a maple extract or something else?

Hi Basil,
The McCormick Company still makes Crescent Mapleine, but it's really hard to find in the stores.
Crescent Mapleine can be purchased from McCormick Company by calling their mail order number at (800) 474-7742. As of December 1, 2001 they sold the standard 2 oz. bottles for $1.94 ea. The shipping is $4.00. for six bottles. They take VISA. Better buy several bottles while it's still available. Phaed

I found it at one of those "odd lot" type stores. It comes in a little bottle, inside of a box. I think I have seen a maple flavoring at Super WalMart also. It will be with the vanilla extract.

I guess then any maple flavoring would work?

Disclaimer: I have not tried this! :) I copied this exactly as it's written on the card Mom gave me. You will notice that it calls for 2 separated eggs but the directions only tell you what to do with the whites. (I'll check on that)

CAKE:
1/4 lb butter
2 cups dark brown sugar
1 tsp mapleine
2 eggs, separated
1 cup milk
2 1/2 cups Presto flour
1 cup walnuts, chopped

Cream butter, sugar and mapleine.
Add milk & flour alternately to creamed mixture.
Beat whites of eggs and fold in.
Fold in walnuts.
Bake in greased tube pan 45-50 min. at 350.

ICING:
1 box 10X sugar (2 lb)
2 tbl melted butter
1 tsp mapleine and enough milk (whatever THAT means!)

Mix to right consistency. (again, whatever THAT means!)

Sounds good; I bet I can do without the egg yolks; I'll try; I should be able to tell by the consitency of the batter and you know us, no egg yolks anyway! LOL Thanks; but if you do find out something about the egg yolks let me know as that will change the amount of egg whites only!

Cat lover, I talked to my mom and she said she had never made this recipe since she could never get Mapleine! LOL! She also said that the person who gave it to her has passed away. So who knows what happens to the egg yolks?!

I looked for mapleine in the supermarket today but there was none--and no other "imitation maple flavoring" either. I will check other markets when I get to them.

I may have some maple flavoring already; I'll look and if I can get out tomorrow and don't have some I'll see if the local store has some. And then I'll try it with just the egg whites too. So if it all works I'll let you know how it turns out. It really sounds like some of my grandmother's old recipes where she would call things by the brand from the 1930's or so because the original recipe was usually put out by a company using their products of course.

Made the cake today! It turned out fine, I did a few changes to it and some additions: I added 1 tsp baking soda and 1 tsp salt to the flour before I added it to the mixture. Only used the egg whites (cooked the yolks for the dogs; didn't need them in the cake); beat the egg whites till foamy not stiff just foamy. The maple flavoring I had worked fine. On the icing I added the maple flavoring first then just added milk by the tbsp till it was of spreading consistency; didn't count how many; sorry! Taste real good! Thanks!!

Cat lover, did you user Presto flour or just regular flour with those additions?

Guess what, I found "artificial Maple flavor" by McCormick in a grocery store I happened to drive by today when I was out of town. It was over $4 for the bottle so this cake better be good....

I can save the 2 egg yolks and use them for something else.

I plan to try this over the weekend as we are expecting guests but I'm not sure when. Friends of ours just moved to Florida, and they are coming back this weekend to pack the last of the stuff in their house here before the sale closes next week. They have no kitchen stuff or food so we offered to have them over for a meal while they are here.

I just used all purpose flour (whatever brand you have) with the additions. McCormick is the brand I have in my pantry also. Cake taste pretty good. I think I have a cookie recipe somewhere that uses maple flavoring, guess I'm goingto have to hunt for it!

I also just used regular walnuts in it, but I have some black walnuts I gather every year andI think if DH likes the cake I'll try those in it next time.

I just looked into my cabinet to see if I still had mine yep it is put out by Crescent only thing I have in there put out by them, I bought it to make a thin syrup awhile back. Cake sounds good Barbszyy. Happy Cooking/Baking all
