I'm looking for low carb ways to use celery besides just stuffing it
with cream cheese or natural peanut butter. I really don't like
it in soups or stir frys. Are there other ways to use it?

Do you like pimento cheese? I like to stuff mine with homemade pimento cheese. If you don't like pimentos, you can make it without and use a low-carb mayo to make the cheese stick together.

I'm not sure if it would be low carb or not.
But, I chop it up and use it in Potatoe, Turkey and chicken salads.
I also add it to my Dressing mix for chicken, turkey and pork chops.
You can bake the dressing as a caserole and mix the meat into the dressing and bake in one dish altogether at the same time. Served with Cranberry sauce.

I can't think of a thing to do besides the peanut butter and crea cheese. I'll be watching this one to see what ideas come up. Even though I don't do the low carb thing it would be nice to have another snack way of using celery. I usually grow some every year in the garden and usually just chop it for soups!

I tried it with salsa and it was pretty good. It would have worked better with a chunkier salsa though.

I have also mixed it in tuna salad...Mmmm

How do you make it? I haven't eaten pimento cheese in many, many year. :)

I never follow a recipe, so adjust to your taste. I take some grated cheddar cheese. Then, I add some diced pimentos and add to it to taste. Then, I add enough mayo to make it all stick.

My tastebuds have changed since eating healthier, and I noticed everything tastes great with mustard (very very low carb). Give it a whirl. I tried mustard on my hot green beans last night and loved it. Call me crazy, but I thought it was yummy.:p

Mustard on the green beans sounds like it might be good, especially a flavored mustard! Will have to try that!
