1 (16-oz) package frozen mixed vegetables
1 (15 1/2-oz) can light red kidney beans, rinsed, drained
1 (14 1/2-oz) can diced tomatoes with basil, garlic and oregano, undrained
1/2 tsp onion powder
1/4 tsp garlic salt
3 cups warm prepared mashed potatoes
2 ounces (1/2 cup) Reduced Fat Cheddar Cheese, shredded
Combine vegetables, beans, tomatoes, onion powder and garlic salt in 10" nonstick skillet. Cook over high heat stirring occasionally till mixture comes to a boil (5 to 7 minutes).Reduce heat to medium high. Cook stirring occasionally till vegetables are almost tender (4 to 6 minutes). Spoon mashed potatoes onto bean mixture around edge of skillet. Sprinkle potatoes with cheese. Let stand until cheese is melted (2 to 3 minutes).
