Pancakes:
1 recipe pancake mix
1 cup peanut putter chips
Blackberry compote:
1 cup fresh blackberries
1/2cup water
1 heaping teaspoon cornstarch
1/2 cup sugar
Use your favorite pancake recipe, for the number you wish to serve. Before you flip the cakes the first time, sprinkle the top of each with 2 or 3 tablespoons peanut butter chips. When pancakes are done, top with blackberry compote (recipe follows). Makes about 8 4" pancakes.
For blackberry compote:
Put blackberries in a saucepan. Mix the water and the cornstarch. Pour over berries. Cook over medium heat, stirring, until berries are soft. Taste, and add sugar to achieve a pleasing balance of sweetness and berry tartness. Serve compote on top of pancakes. Makes about 1 1/2 cups.
