I know this seems like a simple request, but let me explain the details that make it unusal to find. I have a friend that is a missionary in the jungles of Peru. She is on a very limited budget as well as just not being able to obtain regular ingredients. She has to virtually cook everything from scratch, no opening canned goods at all and so much is just not even availableto her. She is looking for a cream cheese frosting recipe that uses no powdered sugar which is something unavailable to her. She is also limited on cooking utensils so she can't whirl some sugar in a blender into powdered sugar either.(I already tried that suggestion). We came up with a recipe for carrot cake she was able to make but still would like to put the cream cheese frosting on it. So, Chef Mark can you help here? Or anyone else for that matter! Thanks!

I am not a pastry chef but the only cream cheese frostings I have ever made rely on the two things your friend cannot avail herself of: powdered sugar and electric mixers.

I guess she could take a wooden spoon and mix cream cheee and butter together as best she can. Can she get regular sugar? That might make it a little grainy though. Maybe corn syrup instead for the sweetness?

Thanks, but to me the regular sugar just wouldn't give it the consistency I wouldn't think either. Not sure on that one, but just my thought. I thought you might have an answer and thanks for the try! Do you know a pastry chef that might be able to help?
