I know I saw muffin recipe which had cottage cheese in it, and have not idea where I saw it. Please help.

Norma, are these sweet or savory muffins? Was there any fruit in them or were they fairly plain? I hope someone here on MM can help you.

crochet2, hope this is what you are looking for. I know there was a bread recipe posted I thought here on MomsMenu that used cottage cheese, but I can't find it either. So here is a muffin recipe. Let us know what you think! Enjoy!


Cottage Cheese Muffins

2 cups all purpose flour
1 tbsp sugar
2 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 egg
1 cup milk
1/4 cup unsalted butter, melted
1 tbsp chopped fresh dill OR sage OR
1 tsp dried dill OR sage
3/4 cup small curd cottage cheese

Preheat oven to 375 degrees. Grease 16 standard muffin cups. In a medium bowl sitr and toss together the flour, baking powder, baking soda and salt and then set aside. In another medium bowl whisk together the egg, melted butter,milk, and herbs. Then mix in the cottage cheese till blended. Add to the combined dry ingredients and stir just till blended. Spoon into the prepared muffin tins, filling each cup about 3/4 full. Bake till a toothpick inserted in the center comes out clean and the muffins are a golden brown, about 20 minutes. Cool in the tin for 3 minutes, then remove to a rack to cool fully.
