View Full Version : Four Cheese Rollatini with Chicken
I want to make four cheese rollatini with chicken I saw advertised on an Olive Garden commercial. I think I could come close to their recipe, but, what are the 4 cheeses? It is lasagna rolled up with 4 cheeses inside, alfredo sauce and sliced chicken on top.
I'm sure there is Ricotta and maybe cottage cheese in them but not sure about the other 2.
Any suggestions? My mouth is watering just thinking about these.

I would say probably mozzarella, Provolone,and Parmesan along with the ricotta. I wouldn't think cottage cheese though as that is sometimes used as a substitute for ricotta.

America's Test Kitchen did something very similar just last week. They used no-boil lasagna noodles, soaking them in very hot water for 5 minutes to make them pliable. They used a lasagna blend of ricotta, parmesan, mozzarella, and egg with fresh parsley and basil for the filling.
When you pull the noodles out of the water, lay them on a clean kitchen towel so they don't stick, spread the filling on the top, leaving the bottom third clear since it will spread as you roll. Put some of the tomato sauce in the bottom of the baking dish, lay the rolls in, seam-side down, and top with more sauce. You will need more sauce than you think you will b/c the noodles aren't cooked all the way and will soak up a lot. Put foil over top and bake at 375 for 40 minutes, then remove foil, sprinkle cheese on top and broil to brown the cheese.
No reason you can't adjust the basic premise to get what you want, adding meat to filling, changing sauce etc....let us know what you end up doing and how it comes out :)

I am hoping dh will take a hint next time the commercial comes on and I say, hmmm I'll bet I could make that. Hoping he will say tell me what you'll need so I can pick it up.

I guess you could have the recipe written down with a shopping list and list "needed items" to make this! LOL Maybe that would be a good hint for DH! LOL Good luck and be sure to let us know how they turn out!
