Cream of Broccoli Soup
Mini Skillet Corn Bread

Cream of Broccoli Soup
1 cup water
2 chicken bouillon cubes
2 cups cut up fresh broccoli
2 tbsp dried minced onion
1/4 tsp salt
1/4 tsp pepper
1/2 cup milk
2 tbsp margarine
In a pan bring the water and bouillon to a boil. Add broccoli, onion, salt and pepper. Reduce heat and simmer 5 to 7 minutes or till broccoli is tender. Let cool 10 minutes. Pour into a blender (be careful when blending hot ingredients), cover and process till smooth. Return to pan and add milk and heat through. Top each serving with some margarine.
Mini Skillet Corn Bread
1 tbsp margarine
3/4 cup plus 2 tbsp corn bread/muffin mix (half of an 8 1/2 oz pkg. of jiffy cornbread/muffin mix)
1 egg
1/4 cup milk
1/2 tsp cider vinegar
Put margarine in a ovenproof skillet or baking dish. Melt in a 425 degree oven and tilt to coat bottom and sides. In a bowl combine cornbread mix and cornmeal. In another bowl beat egg, milk and vinegar. Add to cornmeal mixture and stir till mositened. Pour into the prepared skillet. Bake uncovered for 12 to 15 minutes or till a toothpick inserted in center comes out clean.

1 pkg. ( 9 oz) devil's food cake mix
2 tbsp baking cocoa
1 egg
2 tbsp cream cheese, softened
1 tbsp milk
3/4 cup vanilla or white chips
In a small bowl combine dry cake mix, cocoa, egg, cream cheese and milk; mix well (batter will be thick). Stir in the chips. Drop by tablespoons 2" apart on a greased baking sheet. Bake at 350 degrees for 14 to 16 minutes or till a toothpick tests clean. Makes about 1 dozen
