If you are still looking for some homemade Christmas gifts and have the time this is great--- it doesn't require fresh fruit so you can still make it in time to give!
1 12 oz box frozen sliced strawberries, thawed
1 20 oz can crushed pineapple
5 cups sugar
2 tbsp lemon juice
1 tsp grated lemon rind
1/2 btl. liquid fruit pectin
melted paraffin
Combine strawberries, pineapple, sugar, lemon juice and lemon rind in a saucepan. Bringto a boil and boil 1 minute. Remove from heat and stir in fruit pectin. Stir and skim for 5 minutes. Ladle into sterilized jars and cover with paraffin. Makes about 9 glasses.
