1/4 lb butter
1 small onion, diced
2 ribs celery, diced
3 tbsp flour
2 quarts chicken broth
1 pint peanut butter
1/3 tsp celery salt
1 tsp salt
1 tbsp lemon juice
1/2 cup unroasted peanuts, ground
Melt butter in a pan and add celery and onion. Saute about 3 minutes but do not brown. Add flour and mix well. Blend in hot chicken broth and cook 30 minutes. Remove from heat, strain and add peanut butter, celery salt, salt and lemon juice. Sprinkle ground peanuts on soup just before serving. Makes 15 small servings
