I just started some of my holiday baking and went diving into my supplies to make sure I had everything I need for the recipes I want to make. Well, after quite a bit of a stack of extracts that I have bought for various recipes I decided I really need to look into some ideas of things to do with them; especially some of the more unusisal ones. Here is somewhat of a list of some things I could come up with; do you have any ideas for any particular extract use?
Lemon Extract- To add a lemon flavor in a cake or cookie recipe use 1/2 tsp per 4 servings
Add 1 tbsp per quart to ice tea
To easily ignite flaming desserts soak sugar cubes in lemon extract; then place the cube on top of the dessert and light
It can also replace lemon peel if you are out of that; 1/2 tsp equals 1 tsp grated peel
Chocolate Extract- Add some to an alcoholic beverage
Add some to your chocolate cream pie filing for more chocolate flavor
Add some to your frosting or cookie mix
Clear Vanilla Flavoring - Use in recipes that use white chocolate
Add 1 tsp to your meringue shell recipe to add flavor but no color
Add to white cakes to add the flavor but no color; especially in wedding cakes
