I just started some of my holiday baking and went diving into my supplies to make sure I had everything I need for the recipes I want to make. Well, after quite a bit of a stack of extracts that I have bought for various recipes I decided I really need to look into some ideas of things to do with them; especially some of the more unusisal ones. Here is somewhat of a list of some things I could come up with; do you have any ideas for any particular extract use?

Lemon Extract- To add a lemon flavor in a cake or cookie recipe use 1/2 tsp per 4 servings
Add 1 tbsp per quart to ice tea
To easily ignite flaming desserts soak sugar cubes in lemon extract; then place the cube on top of the dessert and light
It can also replace lemon peel if you are out of that; 1/2 tsp equals 1 tsp grated peel

Chocolate Extract- Add some to an alcoholic beverage
Add some to your chocolate cream pie filing for more chocolate flavor
Add some to your frosting or cookie mix

Clear Vanilla Flavoring - Use in recipes that use white chocolate
Add 1 tsp to your meringue shell recipe to add flavor but no color
Add to white cakes to add the flavor but no color; especially in wedding cakes

Do you have any other flavorings or extracts that you have some ideas for?:confused:

You can put a drop of mint or almond extract into your hot chocolate for a flavored treat. A drop is all you need!

It was really good; the thing I liked the best about it is that it wasn't an overly sweet cake itself, but the icing sure was! LOL

Anyone have a homemade "maple syrup" recipe using maple extract?

add a little mpale flavoring to your brownie mix. I had the best brownies one time that someone had made and they used maple flavoring in the mix. yummy. I still need to get their recipe.

Hmm, that sounds good, I guess just substitute the maple flavoring for the vanilla?

I'm not sure catlover. I really need to get her recipe. they were yummy! none of us at our meeting could tell what the ingredient (maple flavoring or syrup) was until she told us, but it gave them a wonderful flavor.

Dining on a Dime has 2 recipes for maple syrup:

1 cup water
2 cups sugar
1/4 tsp maple flavoring

Stir together & bring to a boil. Simmer 2 to 3 minutes. Cool & pour into serving container. Makes 1 pint.

1/4 tsp maple flavoring
1/2 cup water

Stir together & bring to a boil. Simmer 2 to 3 minutes. Cool & pour into serving container. Makes 1 cup.

Disclaimer: I have not tried either of these recipes!

I think it would taste good as a frosting on cinnamon buns, if you used some confectioners' sugar, a little milk and a tiny bit of maple flavor.

Hmm, will have to try those syrups!! I culd use the recipe you gave with your cake for icing on the cinnamon rolls; thanks for the idea!

I found another recipe using maple flavoring! It is almost like your cake Barbszy!


Maple-Walnut Muffins

2 cups packaged biscuit mix
2 tbsp sugar
1/4 cup chopped walnuts
1 egg
1/4 cup milk
1/2 cup maple flavored syrup
2 tbsp oil
1 tsp maple flavoring

Preheat oven to 400 degrees. Grease 12 (2 1/2" size) muffin pan cups. In a large bowl combine biscuit mix with sugar and walnuts mixing well. Beat egg slightly in a small bowl. Add milk, syrup, oil and maple flavoring and mix well. Make a well in center of dry ingredients and pour in milk mixture all at once, mixing with fork just till dry ingredients are moistened - battter will be lumpy. Pour into muffin pan cups filling about 2/3 full. Bake 15 minutes or till toothpick tests clean. Serve warm. Makes 12
