4 baking potatoes
1 clove garlic, minced
1/2 shallot, minced
1 tbsp + 1 tsp olive oil
1/3 cup soymilk
salt & pepper to taste

Mushroom Gravy
1/4 cup flour
1 cup cold water
1 tsp garlic, minced
1/4 cup chopped mushrooms
1/8 tsp sage
pinch cumin
black pepper,to taste
1 tbsp soy sauce
2 tsp vegetarian Worcestershire sauce
1/2 cup cold water
2 tsp oil


Scrub and dice the potatoes and cook in boiling water till tender. Saute garlic and shallot in 1 tsp of olive oil. Drain potatoes and mash coarsely with a fork and add garlic and shallot, soymilk, remaining olive oil, and salt & pepper to the potatoes. Mash with a potato masher till smooth. Brown the flour in a heavy bottomed saucepan over high heat and stir the flour well till it is a uniform golden brown color.
When the flour is brown, quickly add 1 cup cold water and whisk until all lumps are gone and gravy is smooth. Remove from heat and add garlic, mushrooms, sage, cumin, pepper, soy sauce, and Worcestershire; return to heat and blend. Add 1/2 cup cold water and oil. Blend well and serve.
