1 whole trimmed beef tenderloin (about 6 lb)
salt & pepper
1 tbsp olive oil
2 lbs carrots, peeled & sliced 1/3" thick
4 tbsp margarine
1 small onion,minced
2 garlic cloves, smashed
1 1/2 lb medium mushrooms, halved
1 10 oz bag pearl onions, peeled
3 strips bacon, cut into 1/2"pieces
2/3 cup beef broth
1/3 cup sour cream
Cut off a third of roast and wrap and freeze for another time. Preheat oven to 400 degrees and season remaining roast with salt & pepper. Heat oil in roasting pan and sear beef turning occasionally about 10 minutes. Roast till 115 degrees about 40 minutes. Remove and add 2 tbsp margarine, minced onion and garlic to pan. Cook about 2 minutes stirring. Add mushrooms and cook 5 minutes. Season with salt & pepper. Steam carrots till tender. Slice half of roast thinly and serve with half of vegetables. Cut remaining beef into cubes and put away for next recipe. Place reamining vegetables in another container for next recipe.
Beef Bourguignon
Combine pearl onions, 2 tbsp margarine and 1/2 cup water in a saucepan. Cover and cook over medium heat 15 minutes. Uncover and cook till golden, about 10 minutes. Add reserved vegetables and heat till warm. In a large skillet cook bacon till crisp and drain. Add to vegetables along with broth. Season beef with salt and pepper and cook in same skillet 3 minutes turning once. Transfer to plates and stir sour cream into vegetable mixture and spoon over beef.
