1 lb. turkey cutlets, remove all fat
1/4 cup all purpose flour
1/4 tsp pepper
2 tsp butter
2 tsp vegetable oil
3 tbsp dry white wine
2 tbsp lemon juice
1/4 cup green onion, chopped
Place turkey between 2 sheets of wax paper and flatten with a meat mallet to 1/8" thick. Cut into 3" wide pieces. Combine flour,and pepper in a bag and shake turkey in the bag to coat. Spray a skillet with nonstick cooking spray and heat 1 tbsp each butter and oil in skillet. Panfry half turkey in hot oil/butter for 1 minute on each side. Transfer turkey to platter and keep warm. Wipe skillet with paper towel, respray with cooking spray, and heat remaining butter/oil in skillet. Panfry remaining turkey in skillet and remove to platter also. Add wine, lemon juice and green onion to skillet; boil till sauce is slightly reduced about 1 minute. Pour sauce over turkey and serve.
