3 lbs. boneless, skinless chicken breast, cut up into bite size pieces
2 qts water
1 1/2 cups carrots, diced
1 cup celery, diced
1/2 cup barley
1/2 cup onion, chopped
1 chicken bouillon cube
1 bay leaf
1/2 tsp poultry seasoning
1/2 tsp pepper
1/2 tsp dried sage

In a large kettle cook chicken in water till tender. Cool the broth and skim fat off top. Depending on how much fat you want to remove you may want to do this twice so refriegerate it overnight ,skim and repeat once more. Put chicken and all remaining ingredients into a soup pot and simmer covered at least 1 hour or till vegetables and barley are tender. Makes about 5 servings
