For one day have:
Pork Roast (save some for another day)
Applesauce
Roasted Acorn Squash Rings
Roasted Potatoes

Second day:

Egg Rolls
Pork & Vegetable Lo Mein*

* Saute chopped onion, red pepper and carrots in olive oil in a large skillet till crisp tender. Cook 1 bag ramen noodles. Add to skillet with 2 cups each shredded green cabbage and pork (left from the other day). Cook till cabbage is tender.

First Day:
Corned Beef with Peppery Mustard Sauce * (save some for another day)
Steamed New Potatoes and Cabbage Wedges


Second Day:

Reuben Sandwiches**
German Potato Salad
Pickled Beets

*Mix 1/2 cup sour cream, 1/4 cup grainy mustard,2 tbsp chopped parsley and 1/2 tsp coarse ground pepper


** For Reuben sandwiches layer beef, swiss cheese and drained sauerkraut between 2 slices rye bread. Bake at 500 degrees, turning once till golden and cheese is melted.
