Get ready for all those zucchini coming on those plants!

1/4 cup margarine
2 pounds small zucchini, thinly sliced
5 tbsp green onion, finely chopped
4 cups chicken broth
1 1/2 tsp curry powder
1/8 tsp salt
1/8 tsp ground hot red pepper

Melt margarine in large skillet, add zucchini and green onions; cover and cook 10 -15 minutes, stirring often till zucchini has softened but not browned. Combine half of zucchini mixture, 2 cups chicken broth, surry power, salt and red pepper in a food processor. Whirl till pureed and pour into a saucepan. Repeat pureeing with remaining zucchini mixture and chicken broth. Combine the batches and heat in the saucepan. This can also be served as a cold soup; if you choose to do so chill for 2 hours.:)
