1 14 oz package macaroni and cheese mix
1/2 cup milk
1/2 cup margarine
1 12 oz box soy crumbles
1 1 1/4 oz package taco seasoning
3/4 cup water
3/4 cup fat free sour cream
1 1/2 cups cheddar cheese, shredded
1 cup medium salsa

Preheat oven to 450. Prepare macaroni and cheese according to package directions. Add the soy crumbles to a medium skillet sprayed with non stick spray. Over medium heat saute for 2-3 minutes till thawed and brown.
Add water and taco seasoning and lower heat and simmer 5 minutes.
Add the sour cream to the prepared macaroni and cheese. Spoon half of the noodles into a baking dish. Add the seasoned soy crumble mixture and 1 cup of the shredded cheese. Top casserole with the remaining noodles.
Cover with foil and bake for 15 minutes. Uncover and top with salsa and remaining cheese. Bake uncovered for another 5 minutes or till cheese is melted. Serves 6

I made a vegetarian taco casserole yesterday, but since I got the recipe online, I don't know if I am allowed to post it without giving credit to the person who wrote it. Anyway, jumping from Mexican to a Maine dish I will post directions for a carrot loaf. This was made for years, by my mother. Most of my cooking is for just myself, so I guess at measurements, but will try to get this close enough so it will come out right
Carrot Loaf
Wash and peel carrots, and grate enough to make 2 cups.
Add about 1/2 cup of bread crumbs
2 beaten eggs,
1/2 tsp salt and black pepper if you like it.
Approximately 1/4 cup of milk. Just enough to dampen the crumbs
1 tablespoon of finely chopped onion
Mix all together and pack into a greased bread pan. Bake about 1 hour at 350.
I think the best rule of thumb for measurements, is to use the same amount of grated carrosts as you would hamburg. Then proceed to make a "meat" loaf. I add finely chopped green pepper sometimes.

Love to cook, if you know where you got the recipe from it is always good to post that. But if you are like me I copy them down and by the time I use them and want to post them I have no idea where I got most of them from! LOL And I do a lot of changing of the recipes so my DH can eat them. As far as your carrot Loaf recipe it sounds good. It would be best posted in the vegetarian forum. You could go to it and click "new thread" and fill in the title and the recipe. Then it would pop up under your title of Carrot Loaf in the vegetarian forum. So just follow those guidelines by going to the apporiate forum and clicking new thread and you will be all set. I hope I have explained that for you.
