This recipe comes from Overlook Restaurant in Leavenworth, Indiana. It sits on a bluff overlooking the Ohio River, 32 miles west of Louisville, KY. You can watch the barges come up the river while you eat!
3/4 stick margarine
3 eggs
3 tbsp flour
1 1/2 cups sugar
1 cup crushed pineapple, drained
1 cup coconut flakes
9" unbaked pie shell
Melt margarine and mnx with remaining ingredients. Pour filling into unbaked pie shell and bake 1 hour at 350 degrees or till set and brown.
