View Full Version : Panera Bread Broccoli Cheddar Soup

3 cups broccoli florets
4 cups chicken broth
1 cup half & half
1/2 cup all purpose flour
8 slices Kraft cheddar cheese singles
1/2 cup shredded carrot
1/3 cup diced onion
1/8 tsp pepper

Steam the broccoli for 6 minutes. Chop broccoli after cooled into small pieces about the size of peas. Pour chicken broth into a large saucepan with the half & half. Whisk in the flour and then add remaining ingredients including the broccoli. Take heat to medium and stir till mixture begins to bubble. Reduce heat and simmer about 30 minutes till the carrots are tender and the soup is thickened. 4 servings

Unfortunately, DD "caught" me putting onions and carrots in it, she was sure Panera didn't do that! She would not say it was the same as their's, but she liked it. My DS who will NOT eat cooked carrots had two bowls of it! I don't usually order it out, so I had nothing to compare it to, but thought it was tasty. Needless to say, this was a huge hit! Thank you so much for a wonderful post! :D

That is so funny about your DD catching you putting veggies into the soup. My kids are the same way about Swiss cheese. They have a favorite dish and I still don't think they have figured out that there's Swiss cheese in it!
