This recipe is from WIntergreen Resort nestled in the Blue Ridge Mountains in Virginia.
Six steaks crusted with cracked black peppercorns
SAUCE INGREDIENTS:
2 oz shallots, chopped
2 oz brandy
2 tbsp cracked black pepper
1 qt. reduced beef stock
1/2 cup heavy whipping cream
2 tbsp soft butter
Put crusted steaks in a hot saute pan and sear on both sides and then put in 450 degree oven for 4 to 5 minutes on each side.
SAUCE
Caramalize shallots with peppercorns in oil. Remove pan from heat and add brandy. Add beef stock, Reduce by 1/3 and then add heavy whipping cream. Put back on stove and thicken 15 minutes. Finish with soft butter and add salt and pepper to taste. Serve steaks with sauce.
