1 egg
2 egg whites
2/3 cup firmly packed light brown sugar
1 (2 oz) jar baby food pureed prunes
1/2 tsp grated orange peel
2 tbsp frozen orange juice concentrate, thawed
1 tbsp corn oil margarine, melted
1 tsp vanilla
1 (8 oz) pkg. chopped dates ( 1 1/2 cups)
1/4 cup chopped walnuts
1 1/3 cup all purpose flour
1/2 tsp baking powder
1/4 tsp salt
1 tbsp powdered sugar
Heat oven to 350 degrees. Spray a 9" square pan with nonstick cooking spray and set aside. In a large bowl combine egg and egg whites and beat till frothy. Gradually beat in brown sugar and add prunes, orange juice concentrate, margarine and vanilla and mix well. Stir in dates and walnuts. In a small bowl combine flour, baking powder and salt and mix well. Add to prune mixture and mix till dry ingredients are moistened and pour into prepared pan. Bake at 350 degrees for 20 to 25 minutes or till the top is lightly browned and a toothpick tests clean. Cool on a wire rack at least 20 minutes and sprinkle with powdered sugar. Cut into 16 bars. Per bar: 130 calories,2 g fat,0 g saturated fat,15 mg cholesterol, 70 mg sodium
