This is a recipe I've had for several years that is a great main dish served over rice!
2 lbs smoked sausage (like polish sausage), cut into 1" pieces
3 (15 oz) cans black beans, drained
1 1/2 cup onion, chopped
1 1/2 cup green pepper, chopped
1 1/2 cup celery, chopped
4 cloves garlic, chopped
2 tsp leaf thyme
1 1/2 tsp leaf oregano
1 1/2 tsp black pepper
1/4 tsp white pepper
1/4 tsp cayenne pepper
1 chicken bouillon cube
5 bay leaves
8 oz can tomato sauce
1 cup water
Brown the sausage in a skillet and drain any fat and transfer meat to crockpot. Combine remaining ingredients in the crockpot, cover and cook on LOW 8 hours OR on HIGH 4 hours. Remove bay leaves and serve over hot cooked rice. Serves 6
