This is a one pot meal that cooks while you're away!
1 2/12 lb. dressed rabbit, cut up (you can use chicken in this instead)
2 tbsp olive oil
3 mdium potatoes, peeled & halved
4 carrots, cut into 1" pieces
1 onion, sliced thin
1 cup beer
1/4 cup chili sauce
1 tbsp brown sugar
1 clove garlic, minced
1/3 cup cold water
3 tbsp all purpose four
1/2 tsp salt
Season meat with salt & pepper and brown on all sides in hot oil and drain. In a crockpot put potatoes, carrots, and onion and put meat on top. Combine beer, chili sauce, brown sugar and garlic. Pour over meat and cover and cook on HIGH for 4 hours. Remove the meat and drain vegetables, but reserve the liquid. Return meat and vegetables to crockpot and cover. Measure the liquid and add beer or water to make 1 1/2 cups. In a saucepan slowly blend cold water into the flour and stir in reserved liquid and the 1/2 tsp salt. Cook, stirring constantly till thickened. Put meat and vegetables on a platter and serve with gravy. Serves 4
