1 onion, chopped
1 lb. fresh crabmeat
salt & pepper
1/2 cup vegetable oil
1/4 cup apple cider vinegar
1/2 cup ice water
Spread half of onion over bottom of a large bowl and cover with crabmeat. Top crabmeat with remaining onion and season with salt & pepper then drizzle with oil and vinegar, add ice water and cover with plastic wrap. Refrigerate overnight or at least 12 hours. Toss and serve on lettuce lined plates. Makes 4 servings
