I made this for Labor Day and it turned out well. Only five ingredients!
Blueberry Cheesecake Pie
Mix together the following:
8 oz. cream cheese (the low-fat kind is fine)
1 can sweetened condensed milk (NOT evaporated :) )
1/3 cup lemon juice
Put into a graham crust and cover with blueberry pie filling. Chill for at least three hours.
NOTES: I added a bit less lemon juice because I thought we'd like it better that way... we did. :) I also didn't use a graham crust because I saw that they now have *shortbread* crusts (sold where graham crusts are sold) so I tried that. We like that crust! Also, I used the blueberry pie filling, but any kind would work... it didn't take the whole can, so a smaller can of something would be better.
Disclaimer: :D I have to do this when I add a recipe here because I've *gotten* so many fantastic recipes from this forum. Then I try them and want to share, SO if I got this here and "swiped" your recipe, apologies in advance!
