View Full Version : Buffalo Stuffed Bell Peppers

This recipe is from a buffalo ranch in Colorado

4 large green sweet yellow or red peppers
1 egg
1 1/2 cups meatl;ess spaghetti sauce
1/4 cup onion, chopped
1 tsp Italian seasoning
1/2 cup dry bread crumbs
1/2 cup shredded Italian cheese blend
1 pound ground buffalo

Cut tops off peppers and remove seeds. In a large pot cook peppers in boiling water for 3 to 5 minutes. Drain and rinse in cold water and set aside. In a large bowl combine egg, 1/2 cup of the spaghetti sauce, onion, italian seasoning, bread crumbs and 1/4 cup cheese. Crumble buffalo over mixture and mix well. Spoon into peppers. Place in a greased 3 quart baking dish and top with remaining spaghetti sauce. Cover and bake at 350 degrees for 55 to 60 minutes or till a meat thermometer reads 160 degrees. Uncover and sprinkle with remaining cheese and bake 5 minutes longer or till cheese is melted. 4 servings
