View Full Version : Looking For a Brunch Recipe

I'm looking for a recipe called "BLT Egg Bake"; I believe it is a Reiman Publication recipe, but I can't find it! :eek: I have lots of their recipe magazines, but sooo many I don't know where to look! Anybody out there know of such a recipe; I'd be very grateful to have it!

Wow thanks! That is it! I saw a picture of the dish , but couldn't find the recipe. It really looks good and I thought it would make a nice dish to serve when we have company early some mornings! Thanks again!

Sorry the recipe didn't show up for you. Here it is.

BLT Egg Bake
(Taste of Home)

1/4 c. mayonnaise
5 slices of bread (toasted)
4 slices processed American cheese
12 Bacon strips cooked and crumbled
4 eggs
1 medium tomato halved and sliced
2 T butter
2 T all-purpose flour
1/4 tsp salt
1/8 tsp pepper
1 c milk
1/2 c shredded cheddar cheese
2 green onions
shredded lettuce

*Spread mayo on one side of each side of toast - cut into small pieces.
* Arrange toast mayo side up in a greased 8 in square baking dish
* Top with cheese slices and bacon
* In a skillet fry eggs oveer medium heat until completely set
* Place over bacon
* Top with tomato slices. set aside
*In a sauce pan, melt butter
*Stir in flour, salt and pepper until smooth.
*Gradually add milk
*Bring to a boil, cook and stir for 2 minutes or until thickend
*pour over tomato
*Sprinkle with cheddar cheese and onions
*Bake @ 325 for 10 minutes
*Cut into squares- serve with Lettuce

Yield: 4 servings

:D Sorry I wasn't very clear! LOL What I meant was I saw the picture in a book awhile back but the recipe was gone, I went to your link and got it fine, thanks again!:D

DON'T MAKE THE DISH!!!!!!!

I made this recipe a couple of months ago while my dh was in the states - he doesn't like breakfast for supper, but the kids and I do - it was TERRIBLE!!!!!!!!!!!

The bread was all soggy and it was WAY too eggy for us. It didn't taste anything like a BLT either.

I've made it and we enjoyed it a lot! What was it about it that you all didn't like? Just wondering because it turned out great for us; only thing different I did was I scrambled egg whites in place of the eggs and used fat free mayonnaise and cheese.

Ours was just really eggy. I cooked it the recommended time and it was under cooked, so I had to cook it about 20 min extra. Maybe it was the fact that you used whites and we used whole eggs. I don't know, but I do know I don't even want to try it again.
