I really dislike reheated leftovers. However, if I reinvent leftovers and make something entirely different, it really isn't leftovers. What are some ways that you reinvent leftovers?

Here are some ways in which I reinvent leftovers:
I turn mashed potatoes into potato pancakes
I turn roast into stew
I turn meatloaf into meatloaf sandwiches
I know I have others, but this is at the top of my head.
I try to do planned overs like a pork roast 1 night and later in the week either pulled pork or sweet and sour pork over rice. Sloppy joes on buns 1 night and a few nights later in a cassarole with cornbread on top.I'm lucky my dh & dd like cassroles.
baked potatoes into mash potatoes
friend potatoes make potatoe sandwiches
eft over hot dogs
cut up and put into beans to make beanie weeies
or put cresent rolls around them and bake them in the oven
or sliced them and put cheese in them and melt the cheese
left over vegatibles, store them and then after you have alot leftovers put them into a big pot and make vegitable soup or into a stew
left over rice, open a can of veg soup and mix it in to have rice and soup
know there more but can't think right now.

Here is a recipe that uses leftover vegetables and even leftover cooked macaroni.
Macaroni Cheese Salad
2 cups cooked elbow macaroni
3/4 cup cubed cheddar cheese
1/3 cup mayonnaise
2 1/2 tbsp finely cut green onion
3/4 cup leftover cooked vegetables
2 tbsp chopped stuffed olives
1 1/2 tsp prepared mustard
Combine all ingredients cover and chill. Serve on crisp letuce leaves. Serves 4

Have leftover cooked rice? Here is a good way to use it up; any type of rice works!
Rice Cakes
1 1/2 cups cooked rice
salt and pepper to taste
1 tsp grated onion
1 tbsp finely cut green pepper
1 egg, beaten
Combine all ingredietns and mix well. Shape into 8 small flat cakes. Saute in several tablespoons of butter in a skillet till golden brown on both sides. Serves 4

Have some leftover fish and want to do something different with it? This is easy and tasty!
Fish Au Gratin
1 1/2 cups medium white sauce
1/4 tsp nutmeg
2 cups flaked cooked fish
1/3 cup shredded cheddar cheese
1/4 cup soft buttered bread crumbs
Combine first 3 ingredients and turn into a greased 1 quart casserole or use 5 to 6 individual custard cups. COmbine the cheese and bread crumbs and sprinkle on top of the mixture. Bake at 400 degrees for about 20 to 25 minutes. Serves 5 to 6

Great recipe for Leftover chicken:
3 tbsp butter
3 tbsp flour
1 cup milk
1/2 tsp salt
1/4 tsp paprika
1/4 tsp pepper
1 tsp lemon juice
1 cup diced cooked chicken
1/2 pkg. frozen peas, chopped broccoli or asparagus, cooked & drained
4 eggs, separated
1 9" unbaked pastry shell
Melt the butter and blend in flour. Gradually add milk and stir constantly over low heat till thick and smooth. Add next 6 ingredients and mix well. Blend beaten egg yolks into the creamed mixture. Cool slightly then fold in stiffly beaten egg whites. Pour into the pastry shell and bake at 325 degrees about 40 minutes. Serves 6

Have some leftover meatloaf and tired of the same old meatloaf sandwiches? I had made some meatloaf last week with ground round and needed to use it up quick. DH can only have a small amount of it so I went on a search for somethng lese to do with it; this turned out really good and I think will become a nice warm weather dish for us this summer. Found it in an old cookbook I have had since I was a newlywed! A Better Homes and Gardens cookboook
Meatloaf Stuffed Tomatoes
4 large tomaotes
4 slices american cheese
1 1/2 cup crumbled cooked meat loaf
1 - 8 oz can kidney beans,drained & rinsed
2 tbsp chili sauce
1 1/2 tsp chili powder
Preheat the broiler. Cut tops off the tomatoes and scoop out the pulp and then turn over the tomatoes to drain out well. Cut the cheese into quarters diagonally. In a saucepan combine half the cheese, chopped tomato pulp, crumbled meat loaf, kidney beans, chili sauce and chili powder. Simmer about 10 minutes. Slightly salt the inside of the tomatoes. Broil them about 3 minutes 4" from the heat. Stuff with meat mixture and top with remaining cheese quarters. Broil till the cheese is melted. 4 servings

I do a baked ckn then debone & make ckn noodle soup.

I always like to "reinvent" the leftovers. Then it doesn't feel like they're leftovers.
Fried rice is a great way to use up leftover rice and vegetables--even meat.
Roast beef/pot roast can become burritos, carnitas, enchiladas or Beef Paysanne.
Chicken and turkey: pot pie, any number of casseroles, soup, chicken chili...

Meatloaf cut into squares is great for meatballs in spaghetti.
Crumble it and use to stuff bell peppers.
It can also be used in soup.
Crumble or chunk it, add to leftover rice and veggies, pour a cream soup over the top and bake.
Crumble or slice, add bar-b-que sauce, serve on hamburger buns.
Meatloaf can be used in most recipes calling for cooked ground beef.

If you have a barbecue and wind up with extra hamburgers (NOT cheeseburgers) you can break them up and put them in chili instead of browned ground beef. It works great.

Have some leftover mashed potatoes? Here is a good way to use them up!
Cabbage and Potato Patties
1/2 cup finely chopped onion
2 cups cooked shredded cabbage
2 cups cold mashed potatoes
2 tsp margarine
In a large bowl combine all ingredients except the margarine. Mix to combine and shape into 4 patties. In a large skillet melt the margarine and arrange them in the skillet; brown about 5 minutes per side. Serve immediately. Serves 4
