I got this recipe from my DH's cousin. My DD always asks me to make it for her when she visits.
Acini Di Pepe Salad
1 box Assini De Pepe
3 qt water
2 ½ teaspoon salt
1 cup sugar
2 tablespoon flour
1 ¾ cans pineapple juice
2 beaten eggs
1 tablespoon lemon juice
3 (12 oz) cans chunk pineapple, drained (keep some of the juice)
3 (11 oz) cans mandarin oranges
1 (12 oz) carton of Cool Whip
1 can cream of coconut
Combine sugar, flour, 1 ½ t salt, pineapple juice, and eggs. Cook over medium heat until thick. Cool until it is room temperature. Add lemon juice. Boil water and add the pasta and salt. Cook until very al dente and drain. Cool. Mix sauce and pasta and cream of coconut. Refrigerate overnight so the flavors can marry. Add well drained fruit and Cool Whip. Keep refrigerated. This makes a TON, so it is best to make when there is company.
