What are you doing this summer to encourage your child to ear healthier now that school is out? Will be allowing your child to cook with you and helping in the decisions in what will be on the menus?

I have already talked to my kids about eating healthier this summer. I have told them that I will not be loading up on junk food when we shop.
I have been buying a lot of watermelon and cantaloupe--it seems to be going over really good. They do have icee-pops in the freezer. ;)
We have pudding, pretzels, apples, grapes, gragham crackers and SF jello for them to snack on.
We also buy p-nuts in the shells and they enjoy shelling them to eat them.
I can't say that I won't be making brownies or cupcakes once in a while, though. ;)
Yes, my kids love to help me cook, too!

Since I will be spending a lot of time with my GKs, this is on my mind. I always have plenty of fresh fruit ready for them. I also provide fruit juices as well. I also like to make jigglers with Welch's Grape Juice and no sugar.
Tami, I am like you in that I won't totally eliminate the goodies. My DGD and I love to bake cupcakes together. We may also make homemade pizza together. Mine, of course, will be low-carb. But, I thought it would be fun to have the fixin's in bowls and have everyone decorate their own and bake them with fresh veggies and some ground beef since DH doesn't like pineapple.

Do you have a recipe for low carb pizza crust or what do you use for the crust? When I lived in Pa., a local pizza shop would sell us low carb pizza shells that were fantastic! I sure miss them!!

My boys love eating watermelon and cantaloupe so we will be eating alot of that. Now that they're out of school I am going to let them help plan and cool some of the dinners. I find they will try new stuff if they are involved in cooking it.
We also have been talking good eating since school is out. My dgd has made a chart and we get a point for each friut or veggies we eat. At the end of the week who ever has the most points picks the family activity or movie of the week. I have also been making trail mixes using breakfast cereal and dried fruits & nuts and some M&ms.We usually have pretzels, crackers, chips around. I don't like the idea of making anything forbidden. They just want it bad. We drink either water, ice tea or lemonaid. She also loves to bake so I usually cooperate when she wants to. Baking is 1 of her 4H projects so she has been doing a lot of it.

I don't have a recipe for low-carb pizza. I make mine on low-carb tortillas.
