Since the "girls" are producing lots of eggs again(I'm getting a dozen a day); we are having scrambled egg whites a lot of times. So I've been looking for new recipes so they aren't the same ole every time. Here is one I tried last night; the recipe is from The James Blair House in California. It turned out quite well so I thought I'd share it.
2 tbsp margarine
1/2 cup scallions, finely chopped
1/3 cup whipping cream ( I used evaporated skim milk)
1 3 oz pkg. fat free cream cheese, cut into small pieces
5 eggs ( I used 10 egg whites with yellow food color added)
salt & pepper to taste
Chopped parsley (optional)
In a large skillet melt margarine and add shallots and stir till limp. Add cream and cheese and stir till cream cheese melts. In a bowl beat the eggs with salt and pepper. Pour egg mixture into the pan and stir to blend with cream mixture. Cook till eggs are softly set and sprinkle with parsley. Makes 4 servings
