1 tbsp margarine
8 large eggs, lightly beaten
4 tomatoes, chopped
salt & pepper to taste
8 slices rye bread, toasted
Melt margarine in a large pan and pour in beaten eggs and scramble over medium heat stirring till eggs are near desired doneness. Add tomaotes to the pan and cook stirring about 1 minute. When tomaotes are heated through and start to soften season with salt and pepper to taste and serve on top of 2 slices toasted rye bread. 4 servings
