A friend had this for lunch the other day when we were back in Louisville, I liked it, but of course DH couldn't eat it, but thought I'd share it here because if it is something you can eat it is really good and a take on Redeye Gravy!

1 1/2 cups flour
1 tsp salt
2 tsp pepper
2 pounds stew beef 2 tbsp olice oil
6 small potaotes unpeeled and cut into chunks
1 handful baby carrots
1 onion, cut into chunks
3 garlic cloves, minced
1 bay leaf
2 sprigs thyme
1 cup brewed strong coffee
2 cups beer
1 1/2 cup frozen peas

Combine flour, salt and pepper in a zip loc bag. Add meat and shake till coated. Warm oil in pan and cook meat till brown on all sides. Transfer meat to crock pot and add potatoes, carrots, onion, garlic, bay leaf and thyme. Remove pan from heat and pour in coffee and deglaze, then pour all into crockpot, add beer and cover and cook on LOW 5 1/2 to 7 1/2 hours till meat is tender. Add peas and cook 30 more minutes. Remove bay leaf and serve. Serves 4

I love red-eye gravy, but I have found that it doesn't taste so good on anything but pork and pork fat. How does this taste compaired to the non-crockpot dish with ham?

It gave the stew a bit of a different flavor of course, but it was good. I don't think I would compare it to the dish you are talking about though, because with the beef it is another whole ballgame! I guess you could really use your own beef stew recipe and use the coffee and the beer in place of beef broth or whatever you use. Quite different and something I wouldn't have thought of.
