These make a nice "on the go" breakfast!
2 tbsp carrot, shredded
2 tbsp celery, minced
2 tbsp onion, chopped fine
1 tbsp margarine
1 can (4 1/4 oz) deviled ham
2 cups biscuit mix (I use Bisquick reduced fat)
1 tbsp sugar
2 egg whites
2/3 cup skim milk
1/2 cup cheddar cheese, shredded
In a skillet saute carrot, celery and onion in margarine till tender. Remove from heat and stir in ham and set aside. In a bowl combione biscuit mix and sugar. Whixk egg whites and milk together and stir into dry ingredients. Fold in cheese. Fill greased muffin tims 3/4 full. Make an indent in each muffins and fill with 1 tbsp ham mixture. Bake at 400 degrees 15 to 17 minutes. Cool 5 minutes before removing from pan. Makes 10 mufins
