View Full Version : Grilled Summer Veggies

This is a great summer dish and clean up is quick because it all cooks in a foil packet on the grill!


1/4 cup olive oil
1 tsp dried parsley flakes
1 tsp dried basil
3 large ears fresh corn on the cob, cut into 3" pieces
2 medium zuchini, cut into 1/4" slices
1 medium yellow squash, cut into 1/4" slices
1 medium sweet onion, sliced
1 large sweet bell pepper, diced
10 cherry tomatoes
1 jar (4 1/2 oz) whole mushrooms, drained
1/4 cup margarine

In a large bowl combine oil, parsley and basil. Add vegetables and toss. Place on a double thickness of heavy duty foil and dot with margarine. Fold foil in drug store wrap and seal ends tightly. Grill, covered over medium coals for 20- 25 minutes or till corn is tender, turning once. Makes 8 servings

Vegetables and rice parcels

2 chopped bacon rashers
2 cups cooked brown rice
2 tablespoons chopped parsley
3 carrots halved and sliced
8 baby just cooked squash quartered
cup just cooked cauliflower, roughly chopped
cup just cooked broccoli, roughly chopped
1 cup grated tasty cheese
approx 2 tabs butter
basil leaves
ground pepper
method:
Cut 6-8 pieces of alfoil (double up)
Saute bacon pieces and drain.
Mix bacon with the rest of the vegetables and rice.
Divide between your alfoil parcels (you can make as big or as little as you like)
Divide and put a dob of butter in each parcel.
Wrap parcels tightly, making sure properly sealed and bbq on lower heat protion of bbq until cheese is melted.

A variation on the recipe above, so I guess you can use any veges you like.

Sounds good too! I love cooking in foil because no clean-up!
