This is a great way to use up leftover wild rice!
8 slices turkey bacon, cooked crisp
1 tbsp olive oil
1/3 cup onion, chopped
1/3 cup all purpose flour
1/2 tsp salt
4 cups water
1 can (14 1/2 oz) chicken broth
1 1/2 cups cooked wild rice
1 can (12 oz) fat free evaporated milk
2 cups (8 oz) cubed process American cheese
2 tbsp fresh parsley, minced
Saute onion in olive oil till tender. Mix in flour and salt. Gradually add water and broth, bringing to a boil. Cook and stir till sightly thickened about 2 minutes then stir in rice. Reduce heat, cover and simmer 5 minutes. Add milk, cheese, parlsey and bacon crumbled. Stir till heatd through and cheese is melted. Makes 6 servings
