For breakfast, I had cold pizza (my fave) and everyone else had Eggos). For lunch, we had peanut butter and jelly sandwiches. For dinner we are having hamburgers grilled outdoors.
What are you having today?

I am trying to clean out my deep freeze and frig. before our move.
Tonight we are having poin loin chops on the grill and then some concoction with left over macaroni. ;)
In the next few days we will probably be eating some strange combos. LOL!!! Maybe I'll discover some great new dishes. :D

Breakfast today was cold cereal, lunch was fat free bologna and cheese sandwiches with sides of broccoli & petite carrots w/ Fat Free French Onion Dip. Supper has now changed to : Pinto Beans, Cornbread, and sliced peaches. Dessert; if we have any will be air popped popcorn! We won't even mention the snacking today!:eek:

That'll be the time that I'll be coming back or at least racing (pun intended) to the sports bar to watch Qualifying. So, call me if you need anything. There are a few spots in the mountains I can get phone service. If not, leave me a message and I'll call you. I know that moving is such a pain! Good luck getting moved!

Hubby is having cold cereal as we "speak/type" LOL. Me, nothing this morning! We have to get on the road soon so---- lunch will probably be a 5 g fat sub from a subway and supper will be rice and black beans with a tossed salad. Gotta hit the road!

This morning will be fruit and Eggos for DH and GKs. We'll probably grab something on the road for lunch or stop so I can make tuna sandwiches. I already have the tuna salad made. Tonight will be Poppy Seed Chicken (http://www.momsmenu.com/forums/showthread.php?t=114), carrots, and green beans.

This morning I made turkey bacon and toast sandwiches for breakfast.
I am really not sure what we are eating for dinner just yet. I meant to thaw the chicken wings that are in my freezer downstairs but I totally forgot about them. Not much else in the way of meat left here. I'll see what I can dig up. I am getting really, really sick of eating pasta!! :p

Dagnabbit...:mad: I had some bread dough in the machine, just to make the dough. I forgot that Big DS had an orthodontist appointment. We left the house with 4 minutes left on the timer. I figured I'd come back, punch it down and just go from there. But nooooooo...I opened the lid, punched the dough, and came out with a fistful of cold, wet goo. :eek: NASTY!
There will be no bread with the spaghetti dinner tonight.

Breakfast today was Scrambled Egg Whites, Toast and Coffee
Lunch will be: Broiled fish, steamed broccoli, and Cantaloupe
Supper will be: All the veggies that are ready in the garden steamed( I know there are sugar snap peas, broccoli, and green onions ready), Baked Potatoes, Fat Free Cottage cheese with Pineapple Chunks

it's almost noon so i will be having brunch.. some leftover chinese. For dinner we are having steak, rice, carrots and bread. We have been marinating the steak for a day. Can't wait.

Lets see umm.... DH had cold cereal for breakfast and OJ, I didn't have breakfast. Lunch he will have romaine salad, FF cottage cheese with pineapple chunks and some crackers, I will have some leftover kale with vinegar sprinkled on it and a piece of fish. Supper; I picked a nice size pot of sugar snap peas this morning that I will steam, broccoli salad, baked sweet potatoes, and a piece of turkey kielbasa grilled with some BBQ sauce on it. Will make some homemade ice cream for dessert.

Today is race day. For those that do not know me, I take my NASCAR seriously! I cannot eat during a race as I am too nervous. DH and I will be able to watch it together for the first time in awhile. He is bringing me some burritos from Rosa's in TX to eat before the race. For breakfast, I have some cold pizza, one of my faves. DH has leftover roasted chicken, greenbeans, and rolls for dinner.

Well we ended up shopping most of the day, lots of sales. Got a matress for son's bed, a bicycle for dd birthday (late present) and some stuff for our bathroom, bird feeders for the birds ect. anyway we stopped by a deli for lunch and had sandwiches. Dinner was going to be burgers cooked on the grill but we were so hot and tired when we got home that we ended up doing leftovers. We wil do the burgers tomorrow night.

I was going to start my diet today, but we got in so late (still haven't unpacked everything either) that I've decided to start it on June 1st since it's a nice round number.
Breakfast: DH is having cereal and milk (we have so much leftover from camping). For lunch we will have tuna salad sandwiches. For dinner, we will have brisket, potato salad for me and mashed potatoes for DH, and pinto beans.

We had a glass of juice for breakfast just to take our morning pills! Lunch we had FF bologna & cheese sandwiches, potato salad, and carrots sticks & broccoli. Supper is going to be a ground round herb burger, baked potatoes, and I think I will steam the rest of the broccoli and carrots sticks. Strawberry milk shakes for dessert tonight!

It's been a long time since I had a fried bologna sandwich. I actually remembered to make one for my DGD a few months ago. My DD thought it was gross, but my DGD loved it!

Oh, now you've made me want to eat! LOL And I have no bologna in the house except fat free; and it doesn't "fry" well at all! I'll have to "sneak" into the house some good old fashioned bologna to make a good crisp fried bologna sandwich with lots of catsup on it!

Yesterday hubby and I had a date night and went out for Mexican food without the kids, it was really good but wouldn't you know they sat us by a table with about 10 people and 2 of those were crying kids and the rest of them were talking so loud we couldn't hear each other. We were fixing to ask to be moved when they got finished and left. We shared a fried ice cream for desert, it was different.
We skiped breakfast this morning, will probably have ham sandwiches for lunch and will do barbecue chicken legs, yellow rice, green beans and watermelon for dinner.

Everyone around here had cereal for breakfast except me, I ate a healthy (lol) brownie and a cup of coffee. For dinner we did sloppy joes, ranch style beans and watermelon. Later this evening when things settle down a little hubby is going to fix some fresh coffee and we are going to sit out on the deck and eat another brownie with ice cream this time and have a cup of coffee before bed.

Yea don't know what it is but I go through these spells where I just crave chocolate. I am not a big chocolate eater most of the time but I get in these spells every couple of months where I want chocolate, chocolate, chocolate. And Lacy made brownies the other night and that is all I can think of. I really want a Peanut Butter Cup also but don't have any, I may get Jerry to run down to the store in a minute and get him a Snickers and me a Peanut Butter Cup.

DH had oatmeal for breakfast and I had a cup of coffee and a cup of OJ. Lunch DH had turkey breast/honey ham, sandwich and coleslaw, I had a turkey kielbasa sandwich and potato chips with a big dill pickle
Supper we are both ahving baked pollack, sweet and sour noodles, and steamed sugar snap peas from the garden.
Dessert will be FF strawberry milkshakes!

My menu calendar is sitting her on my desk mocking me. I don't want to plan my menu past Saturday because with the big party there might be some leftovers. If there are not, no big deal--but if there are, I want to eat them...so I guess I'll have to look at what I have on Saturday night and finish the planning. It just drives me nuts not to complete it! :rolleyes:

This morning I have deviled eggs for breakfast. For lunch I have leftovers. For dinner, I will be making DHs fave. We'll be grilling ribeyes and my fave, fillet mignon. He will have a baked potato and I will have grilled veggies in foil and leftover creamed cabbage.

Gee when I just came over here to post a giant Oreo cookie just popped up on my screen, I started to eat it cause it looked so good. It was some kind of advertisement.
The creamed cabbage looks really good DeBora. I love cabbage, the rest of the family will eat it but I love it.
Tonight we are having meat loaf, mashed potatoes and some kind of veggie but I don't know what yet. Oh yea and a salad to start. No desert unless someone wants cookies which we have left over from our trip to Cherokee NC this weekend. I will post my fancy meatloaf recipe later today if I can find it in all the packed boxes, if not I will be making just a plain meatloaf.

Breakfast was chocolate fudge pop tarts - not a regular menu item here, we just had kiddie company over the weekend. (That's my story and I'm sticking to it. LOL)

I have plenty of leftover chicken chili, yellow squash, tomatoes, hamburger patty, and various other things, including cheese to eat on today. I've got to clean out the fridge. DH is coming down to visit, check out a new place to live, and watch the races. He doesn't like chicken chili and there isn't enough hamburger for him. So, I am planning to make him some creamed tuna that he likes.

This morning we had the rosy radishes (fried to taste like fried potatoes... they were good), egg beaters and turkey sausage.
Tonight we had baked tilapia, broccoli with cheese sauce and mocke mashed potatoes. (frist time haveing those potatoes made with cauliflower and i didnt care for them. Others in the family liked them though)

I didnt know that radishes could be fried like potatoes. When I was LCing, I used to fry turnips for fried potatoes. They were really good.
I like faux potatoes but my DH would even try them.

(I don't eat much on race weekends) I made DH go to Hooter's with me so that I could see the truck race as it was on the Speed channel and I don't get that. Bobby was racing in theTruck series and I didn't want to miss it and I didn't care where it was.

Never heard of radishes cooked; do you do anything special to them or just cut and fry like potatoes?:eek:

Here is the recipe we used. I left off the bacon grease and used turkey bacon instead of regular bacon. I also used olive oil and light butter to make it healthier.
The nutritional values posted are for the recipe as written, not with my substititions
Rosy Radish Homefries:
16 ounces radishes, washed, dried and trimmed
(I bought a bag of already washed radishes)
1 small onion, diced (2.5 ounces)
2 slices bacon, lightly browned and diced
2 tablespoons butter
1 tablespoon cooking oil
Salt and pepper, to taste
Quarter the smaller radishes and cut any larger ones into eighths. Heat the butter in skillet that you browned the bacon in, mixing the melted butter with the bacon grease. Add the radishes and onions.
Cover pan and turn heat to low. Allow to cook covered for 10 minutes.
Uncover. Turn heat to medium, add bacon, and cook until nicely browned, stirring occasionally. Season with salt and pepper. Makes 4 servings.
Per Serving: 142 Calories; 13g Fat; 2g Protein; 5g Carbohydrate; 2g Dietary Fiber; 3g Net Carbs

I have deviled eggs for breakfast. I have leftover taco salad for lunch. If I don't get hung up at school, I am going home and DH is going to cook something for me for dinner. If I do get hung up, then I will probably raid the fridge.

Today for lunch I am serving Turkey Club Sandwiches.
For dinner we will have Veal Scalloppine.
1 lb. cubed veal stew meat (I use veal breast cubes)
1 large can (28 oz) whole Italian tomatoes, or diced if you prefer
2 onions, chopped
2 cups mushrooms
1 tsp capers
1 tbl dried basil
1 tbl dried oregano
2 tbl minced garlic
Olive oil
Saute the meat in a little olive oil in a deep skillet until browned on each side.
Add onions and garlic and saute a couple of minutes more.
Add remaining ingredients. Stir and cover skillet. Turn down to simmer and cook 1 hour.
Serve over pasta.

I have a low-carb meal in the freezer for this morning. I make throw together a taco salad to eat on the way home as I am going home today, no matter how many problems I encounter in the research lab today. DH found a Spaghetti Squash Lasagne (http://www.momsmenu.com/forums/showthread.php?t=633&highlight=spaghetti+squash)in the freezer that I made for dinner tonight. He said he will also make green beans and some spinach.

Tonight we've had storms all over the place blowing things around including blowing a few of the guineas out of the trees! So supper had to be a quick fix, so we had baked sweet potatoes, and an egg white omelet and some chunky applesauce.

Yesterday for breakfast we had Turkey sausage, egg beaters, and a tiny dish of oatmeal with a small piece of banana
For lunch a half a turkey breast sandwhich on low carb bread, a small salad and a small serving of strawberries
For dinner we had fresh green beans, southern fried crab cakes with remoulade dipping sauce, roasted sweet potatoes. (I skipped the potatoes) and salad.
For dessert we had frozen chocolate kisses.
This is the first time I've had crab and they were wonderful. I got the recipe at fbnr.com and it was delicious.
I got the frozen choclate kisses recipe online also. Very tasty! A nice tasty sweet freet that is fat free and sugar free (has splenda in it)
Has anyone else had either of these?

We had eggs, bacon and toast for breakfast with of course coffee except for the kids who had orange juice.
No lunch missed it while we were at the pool. Now it is almost dinner time and to late for lunch.
Dinner will be spaghetti and meatballs with garlic bread and salad for some of us. Sons girlfriend doesn't eat salad, it's green you know so now he doesn't eat salad either.

What do the linseed do? I eat ground flax seed in my yogurt and it gives everything a nutty taste. I eat it for the heart protection, DH won't eat it so he takes the flaxseed capsules.

DH wants to invite friends of ours--family of 6--so I told him I need to know by noon so I can triple the recipe. He is on his way to their house to help them repair their pool.

Ds always wanted a sister,they do fight but don't let anyone try to hurt one of them as the other will procted their sibling. Dd has been involved in karate for the last five years and can hold her own when she has to.

He took it for 2 years or more. I always had a mother/son and a mother/daughter time with each kid every month on top of the family times. It was their special time. But, it was nothing too physical as I am too lazy. lol I think it is important to do things with your children. I taught mine to cook, clean, do laundry and so on so that they would be able to do it as adults. They hated me for it then. They love me for it now.

For Breakfast we had blueberry pancakes (made with Carbquik) and turkey sausage.
Lunch we made homemade pizzas made on low carb tortillas.
For dinner we had baked Italian parmesean chicken, with sauteed zucchini and peppers.
and these peanut butter cookies for desert:
Peanut Butter Cookies
Ingredients:
1/2 cup chunky or smooth (sugarless/natural) peanut butter
1/2 cup Splenda
2 Tablespoon Brown Sugar Twin
3/4 cup heavy cream
1/2 cup chopped pecans, almond pieces or broken hazelnuts
1/2 teaspoon baking powder
4 Tablespoons almond flour
1 Tablespoon macadamia nut flour (optional)
2 teaspoons vanilla extract
Preheat oven to 375°F. Mix all ingredients well and drop onto greased cookie sheet by teaspoonfuls. Bake about 10 minutes, or until set but not hard. Be careful not to burn!
Total net grams of carbohydrate in recipe: 38. If making 10 large cookies, they are 3.8 carbs each. If making 16 smaller cookies, they are 2.4 carbs each.
These were yummy and I couldnt taste the splenda in them at all.

Tonight for dinner I'm serving homemade Shrimp Fried Rice. For fun, we'll have fortune cookies for dessert!
Shrimp Fried Rice (per person)
1 cup cooked rice (I have some that was leftover from a previous dinner, that I froze in a zipper bag)
1/3 cup cooked shrimp
1/4 cup frozen vegetables (peas & carrots, or mixed vegetables)
a little chopped onion
minced garlic to taste
Beaten egg (1 egg per 3 people)
Soy sauce to taste
Black pepper to taste
Dash of sesame oil
1. Scramble the beaten egg in the pan, in a little vegetable or peanut oil, until it is JUST cooked. Remove to a dish and keep warm.
2. Add onion and garlic to the pan and cook for a minute or so.
3. Add rice, vegetables, soy sauce and pepper. Stir to coat.
4. Dice up the cooked egg. Add egg and shrimp. Stir and cook until everything is hot.
5. Add a dash of sesame oil.

Tonight we're having a taco-pasta casserole. I make those "by the seat of my pants" also. It will have small pasta shells, some Cheese & Salsa In A Jar that my neighbor gave us (he works for a snack food company & shares with the neighbors to convert us to using their products!), and meat seasoned for tacos. I'd put corn in it too, but Big DS doesn't like corn, and he'd gripe about it through the whole meal. NOT worth it! LOL! On the side, broccoli and a green salad.

Last night I made Mexican Pulled Chicken for dinner. I kind of "invented" this recipe trying to duplicate a restaurant meal.
Mexican Pulled Chicken (serves 6)
2 cups cooked chicken, SHREDDED
2 cans (8 oz each) tomato sauce
1 cup salsa (we used mild)
1 packet "Fajita Seasoning"
Mix it all in a saucepan and simmer about 20 minutes. Stir often to get the sauce all through the meat.
Serve on small tortillas.

Sounds delicious Barb. For lunch I ameating leftover Green Chile Chicken. DH called and woke me up and asked if i was watching the pre-race show! I couldn't believe I slept that late! Yesterday was so rough and stressfull that I guess I needed a lot of rest. So, here I am, watching the race and playing catch-up. I have to put away my plastic camping dishes and get out my glass dishes. Since I am playing catch-up and I am trying get my place fixed up, I am not sure what I will have for dinner. I do know I have some watermelon. Yum!

Homemade pizza and Dirt With Worms Cake. DD's 3rd birthday today! She LOVES "wormies" and keeps them as friends. I can't wait to present the gummie worm and dirt cake! Since my cake didn't pop out of the tin too well, it may as well look like a garden of turned over soil!!

We're having a throw together tonight. I had some frozen turkey breast chopped; added some turkey gravy, peas, onions, potatoes, and carrots. Sprinkled with poultry seasoning and coarse grind black pepper. Made some stove top and sprinkled it on top of the turkey throw together. Baking at 400 degrees for 20 minutes. Tossed salad on the side.

I haven't posted in a few days becuase I have been traveling or dealing with computer probems.
Today I am going to have chicken quesadillas for brunch. For dinner, I am making spaghetti squash lasagna (http://www.momsmenu.com/forums/showthread.php?t=633), but I am putting meat in mine.

Today is DH and mine 33 rd anniversary so I usually try to come close to what we ate for supper that first night. So since DH can't have "fried" foods any longer the closest I'll come will be sauteed chicken breasts in a couple tbsp of olive oil in the Turbo cooker, baked potatoes and fresh green beans steamed with a salad. Dessert; hmmm...think I will slice up the fresh peaches from our tree and mix in fresh blackberries ans sprinkle with just a tad of splenda!

Thanks for the well wishes! Really turned out as somewhat of an uneventful day; we did have the supper I had planned. But the silly ol;e window fan decided after all this time to kick the bucket--- the switch. It'sd a 1950's style and works so well we weren't ready to let it die. Called and found an electric supply house that had from what they and we thought over the phon a switch just like we needed. So on the roas we went and it turned out to be exactly it! Who would have ever thought we'd still find a part for that thing after all these years! LOL So we just made a day of it and shopped at the thrift store in that town (we always find something to makle into something else; one of our favorite things to do~~ just like all these people that have TV shows do only they are the smart ones and are making money at doing it! LOL
Well thanks again! Not sure yet what we are having yet tonight. Might make some French Toast though for lunch.

Had the French Toast, Gimmie Lean Sausage, and hash browns for lunch. Fixing Eggplant Parmesan for supper over spaghetti, and tossed salad. Need to get back into keeping some jello gelatin and puddings in the reforgerator for when I am too tired to fix dessert. We are still eating late since the hot started, not as bad today though, but supper hasn't even been started yet and it's almost 6, so late it will be! LOL

Breakfast was a half of a small cheese, chicken, green pepper and onion omelelette, a 1/2 cup of oatmeal and a half a small banana.
Lunch was vegetable soup, a half a turkey sandwhich on low carb bread and a few strawberries.
For dinner we had Beef Stroganoff:
One-dish Beef Stroganoff
-= Ingredients =-
3/4 pound boneless beef sirloin steak ; 3/4 inch thick
14 1/2 ounces Swanson seasoned beef broth with onion
2 cups mushrooms ; sliced
3 cups uncooked medium egg noodles
1/2 cup fat-free sour cream
fresh parsley ; chopped
-= Instructions =-
SLICE beef into very thin strips. COOK beef in nonstick skillet 5 min.,stirring often. ADD broth and mushrooms. Heat to a boil. Stir in noodles. Cover and cook over low heat 10 min. or until noodles are done. STIR in sourcream and heat through. Garnish with parsley.

Tonight we're having Taco Sloppy Joes (Sloppy Josés?) ;)
TACO SLOPPY JOES
1 lb ground beef, browned and drained and seasoned for tacos
8 oz tomato sauce or salsa
1 small onion, chopped fine
2 cups Cheddar or Monterey Jack cheese (or a combo)
8 flour tortillas
Mix taco meat and tomato sauce or salsa. Simmer until steaming hot. Meanwhile, warm tortillas.
Spoon meat mixture into tortillas. Top with onions and cheese. Fold like burritos.

Breakfast is going to be southwestern flavored egg beaters and turkey sausage, with a half a banana.
Lunch will probably be saurkraut and turkey Brats leftover from last night
For dinner we are having this really yummy low carb deep dish pizza. This pizza is easy to make and even non low carbers usually love it. You cannot tell that the crust isnt made of bread.
Here is the recipe if anyone wants to try it:
DEEP DISH PIZZA
4 ounces cream cheese, softened
2 eggs
1/4 cup parmesan cheese, 1 ounce (I used the kind in a can)
1/4 teaspoon oregano or Italian seasoning
1/4 teaspoon garlic powder
8 ounces Italian cheese blend or mozzarella cheese, shredded
1/4 cup pizza sauce
4 ounces mozzarella cheese, shredded
Assorted toppings: pepperoni, ham, sausage, 4 ounce can mushrooms, green peppers, bacon, ground beef, etc.
Dash of garlic pepper or garlic powder and some Italian seasoning for top of pizza
*You can lessen the amount of fat in the recipe by using 2% mozarella, light or fat free cream cheese, light parmesan. I did it that way and also used half eggs half eagg beaters for the eggs
*Crust rises
In a medium bowl, whisk cream cheese until smooth and creamy. Whisk in eggs until mixture is well-blended and smooth. Add the parmesan and seasonings, then stir in the 8 ounces of mozzarella until completely moistened. Spread cheese mixture evenly in a well-greased 9x13" glass baking dish or lightly greased and lined with parchment paper *optional (this helps the pizza be easier to get out of the pan and makes less mess to clean up in the pan.). Bake at 375º 20-25 minutes or until evenly browned, but not too dark. Let cool completely on a wire rack. When nearly cooled, take a metal spatula and carefully pry up the edges to loosen from pan. Ease the spatula under the whole crust to loosen. Keep crust in the pan. This makes it easier to remove the finished pizza later. Refrigerate, uncovered, until shortly before serving time. *If you want the crust to be crispier leave the baked crust in the refigerator for several housrs uncovered. This will make the crust drier and it will be crispier when the finished pizza is baked, and you can pick it up with your hands instead of using a fork.
Spread chilled crust with pizza sauce, then cheese and toppings of your choice. Lightly sprinkle with seasonings of your choice. Bake at 375º about 15-20 minutes or until toppings are bubbly. Let stand a few minutes before cutting.
Makes 8 servings
Can be frozen
When I make this I usually only leave the crust in the refrigerator 45 minutes to an hour because the smell from having baked the crust makes everyone hungry
Per Serving: 304 Calories; 25g Fat; 17g Protein; 3g Carbohydrate; 1g Dietary Fiber
You can also use this crust as a cheese bread for sandwhiches and with italian dishes. Sometimes I make a couple of the crusts and let it cool then slice it and freeze it in individual packages of two slices with wax paper between them

Yummy, I made your recipe tonight. I made it in a 9 inch by 11 inch pan. I baked the cheese and egg part first, but after making the pizza, it was not crunchy. However, it was still magnificent!!!! It was more like a pizza casserole than a pizza. I poured about a pound of shredded mozzerella over the top though. I used Canadian bacon, some leftover regular bacon, chopped tomatoes, chopped onions, and chopped bell peppers. It was very, very good!

I'm glad you liked it! Did you refrigerate the crust for awhile before you topped it and baked it? The longer you refrigerate the crust the dryer it gets and therfore the crispier it gets once its topped and baked.
I'll bet you really enjoyed it being you can't normally have pizza on low carbing!

No I didn't put it in the fridge. I live in an RV during school, so I don't have the space to do that. Plus, I don't have time with my schedule. But, it was still very good. I just thought it was more like a casserole. I LOVED it! It was soooo good. I ate it like I would have lasagna.

Ahh ok thats why you didnt get the crispy crust! It is a pain to put it in the fridge or let it sit a long time to cool and lose moisture. It never gets to sit longer than an hour here because people get hungry from smelling the crust bake. LOL

We have been in a money crunch this week so I have been "creative" with our meals, lol. My week runs from Thurs. night to Thurs. night with my shopping.
Mon: we are having fish sandwiches, pierogies and salad
Tues: Quesidillas made with ground turkey, taco seasoning, green peppers and onions. Brown rice ( Might season some with taco seasoning too) + side of green beans.
Wed: spaghetti w/ salad
Thurs: hot dogs and French Fries
Friday: Turkey sloppy joes + not sure what side. Thank goodness it's grocery day.
I'm going to look through the boards for more cheap meal ideas. :)

My kids loved the Quesidillas --my son's with taco meat, my DD's with cheese only. My husband ate them but commented that he likes my chicken quesidillas a lot better. :rolleyes:

I myself LOVE cheese and or chicken quesadillas. I use the low-arb tortillas. I serve them with jalapenos and salsa. It is easy and cheap.

Lunch was italian sausage on low carb bread and a salad
Dinner will be this:
White Chicken Chili
-= Ingredients =-
1 pound of chicken breast ; cooked OR raw..chopped up
1 Tbs. olive oil
1 chopped onion
1 clove garlic
1 14ounce can of chicken broth
1 or 2 cans of chopped green chilies
1 15ounce can of white beans ; Great Northern..drained and rinse
1/2 tsp. salt
1 tsp. cumin ; (you can add more if you like)
1/4 tsp. cayenne pepper
1 cup sour cream ; (you can use regular or non-fat)
1/2 cup cream or Calorie Countdown milk
-= Instructions =-
In a 2 quart sauce pan add oil and cook onion and garlic. Add chicken and
cook (if raw), otherwise, just sautee lightly . Add broth, chilies,
drained beans, and seasonings. Cook for about 30 minutes until flavors
blend. Just before serving, remove pan from heat and stir in sour cream
and cream and stir gently. Heat slightly longer
Serve 4 good sized servings. Serve in bowls and sprinkle shredded Cheddar on the top of each bowl.
And this for dessert:
POUND CAKE
-= Ingredients =-
1/2 cup butter ; softened
4 ounces cream cheese ; softened
1 cup granular Splenda or equivalent liquid Splenda
5 eggs, room temperature
1 teaspoon lemon extract
1 teaspoon vanilla
6 1/2 ounces almond flour ; 1 1/2 cups plus 2 tablespoons
1 teaspoon baking powder
strawberries for garnish
whipped cream for topping (see recipe below)
-= Instructions =-
Cream the butter, cream cheese and Splenda with an electric mixer. Add the eggs, one at a time; blend in the extracts. Mix almond flour and baking powder; add to the egg mixture a little at a time. Pour into a greased 9-inch round cake pan. Bake at 350º 50-55 minutes. Check the cake after 40 minutes or so. The cake will be golden brown and firm to the touch when done.
Top with strawberries and whipped cream
LIGHTER WHIPPED TOPPING
-= Ingredients =-
1 cup heavy cream
1 teaspoons sugar free instant vanilla pudding mix ; dry (or white cholate flavor or cheesecake flavor)
1/4 cup sugar or Splenda

I make this in my small roaster oven (6 qt) set at 200 but there's no reason you can't do it stove-top.
This is a modified version of a "copycat Cracker Barrel" recipe.

We were going to have salmon croquettes, pickled beets, brussel sprouts ,and scalloped potatoes, but... didn't get done cutting grass till 8:30 so a bowl of soup will be supper tonight! Had cinnamon toast for breakfast and we skipped lunch because we started cutting grass early afternoon!

This sounds really good! My DH loves chicken and dumplings and whole chickens are on sale this week for 79 cents a pound. Sounds like on of our meals for this week. Thanks!

I think it depends on the type of dumplings you make. If you are making "drop dumplings" that sit on top of the broth, you cover it. These dumplings are meant to be stirred in. I left it covered once and wound up with a doughy mess.

I work all night and am just going to bed after having been up all night, so there wont be another meal till this evening, when I wake up.
For tonight, I have the crockpot on to cook while I'm sleeping.
In the crockpot, I have roundsteak with onions, green peppers and a can of golden mushroom soup. I hope this turns out. I wanted to use cream of mushroom soup but then realized I didnt have any after the meat was in the crockpot.
No idea what the third meal in the middle of the night will be

I have some plain spaghetti sauce and a bag of cooked Italian sausage pieces defrosting.
Can't decide if I'm just going to heat up the sausage in the spaghetti sauce and serve it over pasta, or make a "baked pasta casserole" out of it, with some shredded mozzarella. I figure I have a few more hours to decide that. It's no more trouble one way or the other.
On the side, green salad and garlic bread.

Last night we had smothered chicken. It was delicious!!! So glad I tried this recipe!
Smothered Chicken
Ingredients:
2 lb of chicen breasts or thighs
1/3 cup mayo
1/2 packet of Hidden Valley Ranch dry dip mix
1/4 cup parmessan cheese
1/3 cup sour cream
3-4 small cans of mushrooms
1-2 tbsp of heavy cream
Place chicken in bakign dish. Spread mushrooms over chicken. Mix together sour cream, mayo, Dip mix and heavy cream, till blended well. Place large spoonful of the mixture onto each piece of chicken, then spread out so it covers the meat and mushrooms. Sprinkle grated parmesan cheese on top, till covered. Bake at 375 degrees 45-60 minutes till top is crusty.
Options:
I added onions with the mushrooms. Other good things to add, are green and/or red peppers and bacon.
You can also place broccoli and/or cauliflower around the chicken breasts and bake it as a one dish meal. The sauce is yummy on the Brocolli and cauliflower

Reading through this thread for ideas always makes me hungry and today was no exception. :) I've been wanting to make a pork roast for a while now... I'll have to remember to make one soon. Tonight's dinner here will be BBQ'd Ribs, cheesy mashed potatoes, and corn... maybe with peppers for a Mexi-corn.

Tonight we're having linguine with shrimp marinara. I buy frozen cooked shrimp when it goes on sale, and then just defrost, take off the tails, and toss the shrimp in the sauce for the last couple of minutes to heat them up.
My homemade chunky marinara sauce:
1 onion, chopped
2 tbl minced garlic (or more, to taste)
Olive oil for the pan
Dash of white wine for deglazing
1 14-oz can petite diced tomatoes
1 28-oz can crushed tomatoes
1/2 cup water
Seasonings to taste: coarse salt, oregano, basil & a touch of crushed red pepper, pinch of sugar
Use a heavy skillet with a lid. Saute the onion in the olive oil. When it begins to soften, add the garlic and saute for a minute or so. Deglaze the pan with the white wine. Add tomatoes, water and seasonings and simmer, covered, at least 1/2 hour.

My menu is pretty boring today, I think I'll just make some chicken nuggets with chips and salad.
Tomorrow for mothers day is our big weekend meal, we are having lasagne with herb bread, foccacia, tossed salad, whole green bean salad, chocolate lamingtons with either ice cream, cream or custard, with chocolates and nuts for nibbles.

We are having 2 sittings for dinner tonight, oh fun oh joy LOL
Quick easy pasta is the dish of choice.
Diced chunks of bacon and onion sauted and then lower heat add
Cream of something soup made to directions on can added to saute pan to gently heat through
Add 1-2 cups cooked or frozen veges and then cooked fettucini or other cooked pasta. Salt and pepper to taste.
As it's cooler in the mornings now we are back onto the oats, the kids love to have their oats made with a flavoured milk, choc, strawb, caramel, maple syrup, chocolate oats is a fave here and they eat thenm no problems!
Good thing is you don't need to add sugar then
