Umm stuff? LOL It's one of those make up as you go recipes.
I used 8 chicken drumsticks
1 can crushed tomatoes
approx 2tablespoons tomato paste to thicken
1 tablespoon worcestershire sauce
parsley flakes
salt and pepper.
Brown the drum sticks in an oven proof stove top dish. Take out drumsticks and set aside.
1-2 tabs tomato paste in bottom of that chicken pan till just bubbled
Add can crushed tomatoes and tab warcestershire sauce, salt pepper and parsley and stir.
(If you don't like warcestershire sauce, sprinkle a little chicken gravy mix over tomatoes to thicken.)
Put back chicken and pop on lid and put in the oven till chicken is tender.
I throw in some mixed frozen veges when chicken has last half hour to cook.
It's one of those throw anything you like into it recipes.
Mushrooms if you like or any leftover veg ......
I served with mashed potatoes but is nice over rice or with pasta.
I don't think I've ever made it the same way twice.
It probably has a real name but it was lost years ago LOL

Sorry made a boo boo it should have read,
worcestershire sauce is optional, use gravy mix instead of tomato paste to thicken if you don't want to tomatoey.
Does that make sense, sorry cause I know warchestershire sauce won't thicken it.

Last night we had smothered chicken. It was delicious!!! So glad I tried this recipe!
Smothered Chicken
Ingredients:
2 lb of chicen breasts or thighs
1/3 cup mayo
1/2 packet of Hidden Valley Ranch dry dip mix
1/4 cup parmessan cheese
1/3 cup sour cream
3-4 small cans of mushrooms
1-2 tbsp of heavy cream
Place chicken in bakign dish. Spread mushrooms over chicken. Mix together sour cream, mayo, Dip mix and heavy cream, till blended well. Place large spoonful of the mixture onto each piece of chicken, then spread out so it covers the meat and mushrooms. Sprinkle grated parmesan cheese on top, till covered. Bake at 375 degrees 45-60 minutes till top is crusty.
Options:
I added onions with the mushrooms. Other good things to add, are green and/or red peppers and bacon.
You can also place broccoli and/or cauliflower around the chicken breasts and bake it as a one dish meal. The sauce is yummy on the Brocolli and cauliflower
This sounds so good to me. I am thinking about trying this one today. :)
I have boneless chicken tenders and gravy over egg noodles planned for my family so if I whittle the above down to single serving size, that should work for me! Broccoli and Cauliflower on the side for all of us.

Do you have a recipe for those croquettes somewhere on the forum? I really get tired of my same few salmon recipes (and the family feels the same. :) ) It would be great to have a new recipe for salmon.

I just flake and clean the canned salmon and add crushed saltine crackers to it. Just crumble the saltines in your hand; you don't want fine crumbs; you want it "hunky". Then grab a hand full and squeeze; you'll have an egg shape croquette; do this to all and refrigerate several hours. I cook mine in a few tablespoons of olive oil; you can deep fry them if you deep fry. I think the refrigeration is what holds them together. Yum-yum!!

Tonight is going to end up cleaning out the refrigerator. I had other plans, but since it is already almost 9 pm; clean out and microwave will do. I know there is some leftover chicken, spaghetti, zucchini, mexican dip in there so we may have to do some add ons to make a meal.

We went to a picnic at a friend's house. They made grilled chicken and kebapcheta (Bulgarian grilled rissoles made with seasoned ground meat), Bulgarian cucumber salad, rice, and corn on the cob. I brought Dr. Pepper baked beans since their 4 kids always beg me to bring that. My friend apologized that they ask for it but I am happy to make something they all like. It gets boring bringing the same dish every time but they look forward to it, so I guess that's the best reason to bring it.
I think tomorrow I will serve pork ribs. DH can cook them on the grill. I'll have DD help me make a macaroni salad.

Tonight I am using some leftover grilled chicken to make quesadillas. We'll have a salad on the side.
The other day I made turkey noodle soup for dinner. I almost never serve soup for dinner as I feel that it's not enough of a meal after everyone has put in a full day. But they all LOVED it. I guess I will serve soup for dinner more often. DH said that he could smell the soup as soon as he came in, and it made the house seem homey to have a batch of soup in the kitchen.

I haven't the foggiest what we're going to have. We generally go out on Fridays - either to friends or out for dinner. If we go out, we'll most likely go to the local Mexican restaurant so my hubby can have his Campenchana. If we go to friends, there's no telling.

Hmmm, I haven't even had my morning coffee yet so supper! LOL It is supposed to get quite warm (again) today so I think I'll grill something out tonight. I have the last of the garden tomaotes to slice, and some fresh yellow squash. I got a kabob rack for the grill yesterday so I think I'll put it to use for those veggies; and grill some boneless, skinless chicken breast... hey; I have supper planned!

I will have my morning coffee when I get to work. We are trying to get the employee newsletter out and get the stories out for the half page ad in the Sunday paper. My Ethics class doesn't get out until 9:45pm, so I will run home after work and pull something out of the fridge--which will be stroganoff, carrots, and maybe a salad.

I've bought a new cook baook that is called "cooking with 3 or 4 ingredients"
Has 3 or 4 main ingredients and the rest are what should be in your pantry.
Sticky Honey soy pork (with stir fry veges and noodles.)
Pork fillet or pork chops
Salt and pepper
3 tablespoons honey
3 tablespoons soy sauce.
Season pork lightly with salt and pepper.
Mix soy and honey in a dish that you can coat your chops or fillet in.
Place in a fry pan or oven dish pouring left over honey and soy over the pork.
Bake or pan fry turning once or twice for approx 20 mins or until cooked.
I had the pork fillet and pan fried until cooked. When cooked I sliced the meat and put the meat, noodles and veg in the same pan (with a little apple juice) as the pork was cooked in, great flavour.
Will try with chicken next time

We are having balsamic chicken, green beans, and tossed green salad.
Barb, balsamic chicken is good as well as:
Flips, quesadillas, chicken and dressing casserole, or even, little pizzas on English muffins so that everyone can add their own toppings, or shepherd's pie? I hope these are some ideas that will help you out of your rut. I hate those cooking ruts.

Maybe a little late, but this is good; so maybe you can have it next time~! LOL Have you already fixed for tonight? What did it end up being?
Impossible Easy Oktoberfest Pie
1/2 lb fully cooked bratwurst, cut into 3" pieces
1 can (8 oz) sauerkraut, drained
1 cup shredded swiss cheese
3/4 cup Bisquick
1/2 cup milk
1/2 cup beer (nonalchoclic works too)
2 eggs
Heat oven to 400 degrees. Spray bottom and side of pie pan with cooking spray. Sprinkle bratwurst, sauerkraut and cheese in pie plate. Stir remaining ingredients till blended. Pour into pie plate. Bake 30 to 35 minutes or till knife tests clean. Let stnad 5 minutes before serving.
Good with a fruit salad and rolls!

I am making spaghetti and turkey meatballs for the family. My plans have changed for my dinner since I posted on FC. Since I had a chef salad for lunch, I think that I will have a couple of Turkey Meatballs (I make them low carb) and some sauteed zuchinni. :) More water to drink for dessert! LMBO!! I weigh in tomorrow at the doc's and I swear losing these last few pounds have been torture!!! I want some chocolate!!! :p

Lots of rain AGAIN!!! So meals...... probably will try and use up more leftovers in the refrigerator. It's so full I can't get anything else in there! Might even freeze some of the goodies stilll god enough to do that with so we can change what we're eating right now!

My mom sent us home the other day with some beef stew. I know it's not a good idea to freeze potatoes, so I was thinking that I'd take all the potatoes out, heat them up with some stew and have that for lunch, and freeze the rest (adding new potatoes for next time). My great-aunt said she always freezes her stew with potatoes and never has a problem! :confused:

Sunday--Stuffed Peppers and Caesar Salad
Monday--Steaks on grill, baked potatoes and aspargus with cheese sauce
Tuesday--Pork Chops, mashed potatoes, gravy and a veggie
Wednesday--Chicken, noodles and veggie
Thursday--Slow Cooker Pepper Steak

I was able to get my "list of dinners for the month of April" finished. Now to decide what dinners I'll make on what day

I don't/can't plan ahead either. If I could not go to the store for a week, I'd be fine between what's in the pantry and what's in the freezer, but I just can't seem to plan ahead.
Right now, it's 8:30 a.m. and I have no clue what's for dinner tonight. In the freezer, I have either steak, fish or chicken, none of it defrosted. I may just browse the recipes here and see if something sounds yummy.
For those that plan ahead, do you ever find that you just don't feel like the meal you have planned?

Audrey, that's why I planned by "list" instead of by "calendar." The list is really a guideline for me. It tells me that I have enough meat in the freezer to make these meals. All I would need in some cases is the fresh vegetables (for example, mushrooms for the beef paysanne). If I decide that I want to make Chicken Marsala instead of Chicken Piccata, it's still the same amount of chicken, and I have it.
But that list gave me 30 meals that I can make this month. I broke it down by category because on some days I really need that "Quick" meal option. All the new recipes are not "quick" this time because it takes me longer the first time around to cook something.
I used to plan for a whole month at a time, but using a calendar. Then by the end of the month I was crossing things out, switching around....the list is more effective for my use.
Tonight I'm trying a new recipe--empanadas. On the side, salad with Boston lettuce and radicchio, macaroni salad, and bell pepper strips with dip.

I ended up with a salad, hot spinach, steak and I love my carbs a small amount of pasta.
I asked my daughter to go through my cookbooks tonight and pick out a meal for tomorrow night. I am forever trying new things.
I'd love your recipe for orange chicken. My daughter just commented the other day that she'd love for me to make it.

Audrey, there's no reason you can't use chunks of boneless chicken breast in that recipe. I generally use whichever I happen to have on hand.

Last night we had a skillet dish I used stuff in the refrigerator for. Today will either freeze anything I can or toss it to the chickens or the compost.
Might have visitors this weekend so need to make some refrigerator room. Might make some macaroni salad and coleslaw in case we do. Have several ctn. of lunch meat and steaks and chicken in freezer they can throw on the grill. So that means tonight DH and I will have canned soup or something simple.
DS learned yesterday that the compression fractures on two vertebrae the doctors are going to try and let heal naturally instead of doing back surgery. He's in pain, but does well standing, anything as long as he's not sitting or laying down. They think about 6 to 8 weeks minimum.

Tonight I'm serving Beef Paysanne. It's a recipe that was posted at Family Corner (http://www.familycorner.com/forums/showthread.php3?p=598598#post598598). This is a great way to "disguise" your leftover roast beef or pot roast. The only change I make to the recipe is adding 2 cups sliced mushrooms, at the same time as adding the meat. (Yes, my kids like mushrooms! How weird is that?! Big DS is the one who suggested the addition). This will be served over noodles, with some sort of green vegetable.

I am trying a recipe from Cooking Light magazine, March 2008. It's called "Pork Chops with Hoisin-Molasses Barbecue Sauce." It's supposed to be chops on the grill, but I am making the sauce to use over a pork roast in my roaster oven.
On the side, orzo cooked in chicken broth with onions, garlic and Parmesan, and a green salad.

Having BBQ salmon tonight with steamed green beans and onions from the garden with roasted potatoes.
BBQ Salmon
1/2 cup BBQ sauce
2 tbsp brown sugar
1 green onion, sliced
4 salmon fillets or steaks
Have grill heated to medium and spray grates with nonstick cooking spray or use and perforated grill rack that has been sprayed. Mix barbecue sauce, brown sugar and onions together Grill salmon about 4 miutes per side. Brush generously with the barbecue sauce mixture. Continue grilling 2 to 4 min. or till salmon flakes easily with fork, turning occasionally and brushing with the remaining barbecue sauce mixture.

Going to a picnic at a friend's! We're bringing Dr. Pepper baked beans, watermelon and vegetable platter.
DR. PEPPER BAKED BEANS
2 cans (11 oz) pork and beans, UNDRAINED
1 can (14 oz) cannellini (white kidney) beans, DRAINED AND RINSED
1 can (14 oz) pink beans, DRAINED AND RINSED
1 can (14 oz) petite diced tomatoes, UNDRAINED
6 ounces Dr. Pepper
1 cup brown sugar
1/4 tsp cloves
1 cup EACH onion, bell pepper and celery, chopped fine
Mix all of this in a 3-qt or larger casserole dish. Bake, covered, at 350 for 45 minutes.
I like to make this in my 4-qt Nesco roaster and bake at 300 for the first half hour, then turn down to 200 until the rest of the meal is ready to serve.

DH is in town, FIL had to cmoe to town to see SIL off on the plane, so I invited my sister and her 2 kids and my DD and SIL. Of course, I have the GKs. We had a cook-out of hamburgers. We had grilled hamburgers, sliced tomatoes, sliced onions, and shredded lettuce. For sides, I served baked beans and chips as well as soft drinks and green tea. We all had a blast and then most went swimming after the food settled.

DS and his fiancee came for a visit and stayed for supper. For dessert I made a berry trifle that had a mixture of fresh picked blackberries, blueberries and strawberries. I used french vanilla pudding and butter pound cake in it.

DeBora, did you get your green tomatoes? I stopped in the Kroger back in the city and they are selling green tomatoes in the produce department, shocked me, but not as much as the price. They were twice the price of ripe ones!
DH and I had packed out lunch, but of course we ran late and got hungry late in the day so I picked up some chicken tenders in the deli and we ae those on the way home. So called supper I guess.
We will both be hungry later, so I have some tossed salad in the refrigerator we can make a nice salad with some chopped low fat ham on it.

Might have DS and wife for supper tonight so planning a meal a little unlike what DH and I normally eat. Having Cabbage and Beef Casserole, Mashed Potato Casserole, and fresh green beans from the garden. Will slice up fresh tomatoes,green peppers and some onions from the garden also.
Cabbage and Beef Casserole
1 medium onion, chopped
2 tbsp margarine
1 pound extra lean ground beef
6 cups shredded cabbage
1/2 tsp pepper
1 can condensed tomato soup
Saute onion in the margarine. Add beef and cook till browned and drain. Spread 1/2 the cabbage in a 2 quart baking dish and sprinkle the meat over it. Cover with the remaining cabbage. Spread tomato soup over the top; sprinkle with the pepper. Bake covered 1 hour at 350 degrees.
Mashed Potato Casserole
10 large potatoes
1 stick margarine
2 beaten eggs
2 - 8oz pkgs. cream cheese
2 tbsp chives
2 tbsp parsley
1/2 cup grated cheese of your choice
cracker crumbs
Cook potatoes and drain off water. Add margarine and mash. Mixture should be thick. Add remaining ingredients and mix thoroughly. Pour into a baking dish that has been sprayed with nonstick cooking spray. Top with grated cheese and cracker crumbs. Bake 20 to 25 minutes at 375 degrees.

Fixed a pot of chili tonight' didn't use any water as a additive. I had a partial keg of beer in the back of the drink fridge in the garage that we forgot about so used it as the water additive in the chili. There is still a little left so maybe tomorrow I'll do beer biscuits and freeze them.

Fathers day do having a bbq lunch of chicken drumsticks, pork sausages, coleslaw, hashbrowns and garden salad, cheese cake for dessert

Have a large crockpot full of fresh green beans from the garden and I threw some fresh corn on the cob on top of the beans. Will fix some sort of potato dish and Chciken A La Orange.

Steak on the grill, brussel sprouts for DH, spinach for me and potatoes boiled, then drain them add some shredded cheese and onion and bake them about 30 minutes.

Breakfast this morning is going to be old fashioned oatmeal with some ground walnuts and dried cranberries in it.
Lunch, depends on what we are involved in at the time.
Supper will probably be ham sandwiches and coleslaw.
