Sausage Cheese Balls

Recipe makes 6 dozen.

They can be frozen, uncooked, to bake at a later time. Carb count for entire recipe, is approximately 35 carbs.

Bake at 375 degrees, for 15 minutes

2 pounds sausage
1 1/2 cups "0" carb baking mix (carb sense) *I used Carbquik (http://www.netrition.com/cgi/goto.cgi?aid=281&url=tova_carbquik_page.html)*
16 ounces sharp cheddar cheese-shredded (4 cups)
1/2 cup finely chopped onion
1/2 cup finely chopped celery
1/2 teaspoon garlic powder

I added one small can of diced jalapenos because I thought it would be a nice addition and it was a huge boost of flavor!


Mix all the ingredients together, and form into 1" ball, to make, approximately 6 dozen. Bake at 375 degrees, for 15 minutes, on an ungreased cookie sheet, until golden brown.

For a firmer texture, add an extra 3 cups of baking mix and an extra 2 cups of shredded cheese, to the ingredients listed above


These were awesome! Everyone loved them. I made the entire recipe but split it into two batches... one half recipe with hot sausage and jalapenos added. One half recipe with mild sausage, no jalapenos and exactly as written
