1 cup mayonnaise
2 tbsp parmesan cheese, grated
2 tbsp sugar
1 medium head lettuce, torn into bite size pieces
1 medium head cauliflower, broken into florets
1 red onion, sliced thin
1/2 cup bacon bits

In a small bowl stir together first threee ingredients and set aside. Layer the remaining ingredients in a large bowl and pour dressing over it. Refrigerate and toss just before serving. 6 servings

This is very timely for me! I've been thining I should do a lot more salads for dinner during the hot months and this sounds great. I think that bit of parmesan would give it a lovely flavor that most salads don't have. Can you think of a reason why tomatoes couldn't be added to this?

Actually you can add whatever you like; some times I even add frozen peas; thaw them and rinse with warm water, drain and add a layer of those too! As far as the tomatoes,I usually use either grape or cherry tomatoes so there isn't juice running in to the other layers and watering it down.
