How do you make Mexican Rice? Would love to have the recipe,Thanks!
Real easy; here it is:

Mexican Rice

2 tbsp olive oil
1 cup uncooked regular rice
1 samll onion, chopped
1 small green pepper, chopped
1 clove garlic, minced
2 large tomatoes, peeled & chopped
2 cups water
1 tsp salt
1/2 tsp pepper

Combine oil and rice in a large skillet and cook over medium heat till rice is lightly browned. Add onion, green pepper and garlic and cook stirring constantly till tender. Add tomatoes, water, and pepper and cover. Cook about 20 minutes over low heat. Serve immediately. 6 servings
