6 bacon strips, diced
1 medium onion, chopped
4 cups sliced peeled cooked potatoes
1 pkg (10 oz) frozen peas, cooked & drained
2 cups (8 oz) shredded sharp cheddar cheese
1/2 cup mayonnaise
1/2 cup milk
In a skillet cook bacon till crisp and drain, reserving 1 tbsp drippings. Saute onion till tender. Layer potatoes, peas, 1 cup of the cheese a d bacon. Reduce heat, cover and simmer 10 minutes or till heated through. Combine mayonnaise and milk till smooth and pour over the top. Sprinkle with remaining cheese; remove from heat and let stand about 5 minutes before serving. 4 servings
