2 pounds (6 medium) potatoes, unpeeled
1 tsp salt
5 tbsp unsalted butter
freshly ground black pepper to taste
sea salt to taste
Rinse potatoes and boil unpeeled potatoes in salted water in 2 qt pan till nearly done. Cool. Peel and coarsely grate potatoes into a medium size bowl. Melt butter in 10" skillet and add potatoes. Press potaotes down to form a cake. Cook 15 minutes or till potatoes are brown on bottom. Turn with a large spatula and fry about 10 minutes or till second side is crisp and brown. Cut into wedges. Season Serves 4
