View Full Version : What things can you do with leftover Easter eggs?

Since Easter just ended, I am wondering what everyone does with those leftover Easter eggs or boiled eggs in general?

I love deviled eggs. I love boiled eggs, but besides egg salad and deviled eggs, what else is there to do with boiled eggs?

LOL! We had 3 dozen eggs to get rid of here....lots of egg salad sandwiches.

Add some cooked shrimp to egg salad for a whole new twist!

Just thought of another one. You can also chop up boiled eggs and add to potato salad.

Here's a good casserole using hard boiled eggs:

Potato and Hardboiled Egg Casserole

6 boiled potatoes, peeled and sliced 1/4" thick
1 cup sour cream
1 (10 1/2 oz) can cream chicken soup
1/2 tsp pepper
1/4 tsp curry powder
4 hard boiled eggs, sliced
1/2 cup soft bread crumbs
1/2 cup shredded sharp Cheddar cheese

Preheat oven to 350 degrees.Combine sour cream, chicken soup, pepper, and curry powder. Layer bottom of a 2 quart casserole with 1/3 of potato slices, then 1/3 egg slices, then 1/3 cream mixture. Repeat layering 2 more times.
Sprinkle bread crumbs and cheese over top. Bake uncovered at 350 degrees about 30 minties or till heated through and browned on top. 6 servings

I still have some left from Easter too.
You could make meat loaf and peel some of the eggs and cook them inside of the meat loaf for a surprise at your meal.
You can also add them to a tossed green salad sliced over the top.

Sandwich fillings for a quick meal;
If you have some left over roast beef, pork, chicken or some hotdogs grind or chop it up and add some of the hard boiled eggs mashed or chopped, mix in some Miracle whip/salad dressing with salt & pepper, pickle relish, onions. To your taste. With the chicken add some celery chopped. With the beef add green or red peppers chopped. This can be eaten with crackers or on slices of bread for sandwiches.

These are great ideas. Other than making egg salad which we get tired of I usually end up throwing them away. I will have to try that cassorale next time. I just threw the extras out yesterday.

Another real simple thing to do with the left over hard boiled eggs is to save some of the pickling liquid from pickled beets and put several shelled, hard boiled eggs into it. Let them sit over night in this refrigerated and then they go good on a appetizer tray or sliced and served on sandwiches!

goes into lunches for school or work really well. Also for kid's snacks when they come home from school and hungry..

go into tuna fish sandwiches,
use them for breakfast with a bowl of cereal, make devil eggs out of them.

What eggs we didn't eat whole, we cut up and put in salad. Luckily we didn't go overboard in the egg department. Well, I guess real eggs would have been better than all the candy we accumulated. ;)

:D I think you may have a difficult time finding anyone to agree with
that statement. hehe I think I'll choose the candy. :)

Hee-hee, my Dh says he doesn't want to tell me a recipe is for the "keep" file because I have so many more to try and collect everyday that once it makes it in that file he never sees it again! LOL

I have a huge recipe collection and still collecting! I have a 4 foot high cabinet full of 3 x 5 files that are each about 2 feet long. Three 8 foot shelves full of books and the list goes on and on! LOL I usually don't post them unless they have been tried; only if someone is looking for something, but if one untried is posted I try to let that "untested" be known.

I make them into deviled eggs, or I'll chop them for chicken salad sandwiches, or justto put on top of a garden salad.

Mushroom and Cabbage Pie


Your favorite 10" double pie crust

FILLING

3 cups shredded cabbage
1 large onion, chopped
Olive oil
1/2 lb. button mushrooms,sliced
1 tsp fresh chopped basil
1/2 tsp dried marjoram
1/4 tsp dried tarragon
1/4 tsp salt
1/2 tsp coarse grind pepper


OTHER LAYERS

4 oz fat free cream cheese, at room temperature
4 hard boiled eggs, sliced
1/2 tsp fresh chopped dill
1 egg, beaten



Heat a large skillet over medium heat and spray with a light layer of olive oil. Add cabbage,onion, and mushrooms. Simmer til cabbage is tender stirring often about 20 minutes. Season with basil, marjoram, tarragon, salt and pepper. Preheat oven to 350 degrees. Divide dough in half and roll out a top and bottom crust on a lightly floured board. Place bottom pastry into a 10" deep dish pie pan. Spread bottom with cream cheese and cover with a layer of the sliced hard boiled eggs. Top with cooled cabbage and mushroom filling. Sprinkle lightly with dill. Apply top crust and seal edges. Cut slits in the center of the top crust and brush with the beaten egg. Bake about 30 minutes till crust is golden. Let rest 10 minutes before cutting and serving. 8 servings

My mother used to always make eggs ala goldenrod with easter eggs. Simple, tasty and inexpensive. Just make a white sauce, add chopped or sliced eggs and serve over toast. Oh the childhood memories of mom's cookin'.

If you get too many eggs at Easter. You could make some edible art projects.

Make mice by adding some cream cheese after slicing in half pointed end on top. Add some raisins for eyes and some pretzelsor cooked spegetti for whiskers. This is just a start for now. Get creative.

This is a yummy salad to use a couple of those leftover eggs.

RANCH TUNA MACARONI SALAD

1/2 lb elbow macaroni, cooked, drained and cooled
2 hard-boiled eggs, coarsely chopped
1 can tuna, drained
1/4 cup finely diced onion
1/4 cup finely diced celery
1/4 cup finely diced carrot
1/2 tsp black pepper
1 cup ranch dressing

Mix it all up and allow to sit at least 3 hours before serving.
