2 tbsp onion, chopped
1/2 clove garlic, minced
1 tbsp margarine
1/2 10 1/2 oz can condensed Cheddar cheese soup
1 (3 oz) can sliced mushrooms, drained
1/4 cup milk
2 tbsp dry sherry
1 tbsp parsley, snipped
1 1/2 cups cooked lobster( you can use canned , frozen or fresh as long as it is cooked)
1/2 cup frozen peas, cooked & drained
1 tbsp buttered bread crumbs
Cook onion and garlic in margarine till tender but do not brown. Stir in soup and mushrooms. Gradually blend in milk, wine, and parsley. Add lobster and peas. Cook and stir till heated through and spoon into two 1 cup casseroles; top with crumbs. Bake at 350 degrees for 25 to 30 minutes . Makes 2 servings
This makes a nice sit down meal for the two of you. Have some steamed green beans, mixed fruit bowl, rolls with butter and you have a nice meal that doesn't take too long.
