You can really make your own version of potato salad fat free by using either fat free salad dressing OR fat free mayonnaise. And use the trick here for eggs if you use them in your recipe!
1/2 cup egg substitute
4 medium potatoes, cooked & cubed
1/2 ceup celery, diced
2 tbsp green onions, sliced
3/4 cup fat free mayonnaise
1 tbsp lemon juice
2 tsp salad mustard
1 tbsp sugar
1/4 tsp celery seed
1/4 tsp salt
1/4 tsp pepper
In skillet sprayed with nonstick cooking spray, cook egg over low heat just till set. Cool and dice. Combine eggs, potatoes, celery and onion. In another bowl mix remaining ingredients and add dressing mixture to potato mixture and stir to evenly coat. 6 servings
