View Full Version : Master Brine Recipe for Meats

10 cloves garlic, minced
3 quarts water
1/2 c kosher salt
1/4 c & 2 t black peppercorns
1/4 c & 2 t sugar
1 1/2 t dried thyme
1 t whole allspice
1 bay leaf

Bring all ingredients to a boil in a large saucepan, reduce heat and simmer for 15 minutes. Allow to cool completely before using. Large heavy duty sealable plastic bags work the best. Soak all types of meat 48 hours for the juiciest meat you have ever had. Good for all types of meats.
