4 oz of Tamarind
2 c hot water
1 c seedless dates
1 T light brown sugar
1/2 t salt
1/2 t either cumin or curry (your choice)
1/4 t hot pepper or cayenne pepper
Put Tamarind in a container, pour hot water over it and let stand overnight to soften. Pour water and soften Tamarind in a strainer then rub till all the meat is off the seeds. Discard seeds. Add all the rest of stuff, cook over medium heat till it becomes like a soupy jam.
