:confused: Okay , Do you have any shrimp recipes to share? They can be using fresh shrimp, frozen shrimp, cooked and uncooked shrimp, even canned shrimp! I know there is more out there than just shrimp ****tail and coconut shrimp!:D

I sautee shrimp in olive oil w/ garlic and cajun seasoning, then add cooked linguini to the pan and mix together.
I also love shrimp kabobs on the grill. I marinate them in one of the GRILL MATES packets, throw them on skewers and serves with rice. :)
Shrimp Alfredo is also very good!
I take a block of cream cheese and cover it with ****tail sauce-to which I have added chopped shrimp. Serve with crackers.

You made my mind up for supper tonight! Your sauteed with garlic and Cajun seasoning will do just fine. Funny, I never have added Cajun seasoningto shrimp; don't know why as it sounds great!

It actually came out quite well; so much that I had to stop hubby from eating so much of it because of the cholestrol with it being shrimp! I lioked that it was quick too! I'm thinking of maybe assembling the ingredients and try cooking it in foil on the grill next time.

I posted a recipe for Cajun Cumbo (http://www.momsmenu.com/forums/showthread.php?p=2252#post2252)that has shrimp in it. I love it, but it is too spicy for DH. Plus, he doesn't like seafood.

I make a lemon-garlic sauce, with butter and olive oil, and some fresh parsley. The shrimp come out wonderfully. I serve it over rice or linguini, with garlic bread and sauteed broccoli rab. ( you could serve any green) .

here's an idea for a shrimp salad on one of those swealteringly hot summer evenings:
Shrimp 'n Avacado Taco Salad (2 adult servings)
2 lg. flour tortilla shells, fried into a bowl shape (like Taco Bell's)
3 C. shredded lettuce
1 tomato, cubed
2/3 C. shredded Monterey Jack cheese (or Mexican blend)
1 ripe avacado, peeled & cubed
1/2 lb. cooked salad shrimp
a few black olives, halved
chopped red or green onion (to taste-I just add a bit for garnish)
Layer ingredients in the fried shells & drizzle with dressing to taste.
SalsaRose dressing:
1/4 C. medium-hot salsa
1/4 C. sour cream
dash garlic powder
dash cumin
dash salt
Combine & chill.
I fry my tortillas so they make a shell that kinda fits in my flat soup plates, then I can set the shell in & just build each of us our own salad.
Can substitute some slightly broken-up tortilla chips as a base if desired.
DH enjoys this as much as I do, & it makes for a cool, quick summertime meal-in-a-dish.
I make beef & chicken taco salads the same way.

Sounds good and I have some "forms" to put the tortillas over and bake them into bowls so DH can eat them; thanks for sharing the recipe, will be giving it a try soon!

This is one I recently tried and enjoyed!
Texas Shrimp Boil
1 quart water
1/2 tbsp bottled hot pepper sauce
1 1/2 tsp Worcestershire sauce
1/4 cup coarsely chopped celery
1/4 cup coarsely chopped carrot
1/4 cup coarsely chopped onion
1/2 tsp finely chopped garlic
5 tsp liquid crab boil
1 1/2 tsp black peppercorns
1 juice of freshly squeezed lemon
1 1/2 tsp Creole seafood seasoning
1 1/2 tsp cayenne pepper
2 bay leaves
1 tbsp salt
3 pounds red creamer potatoes
3 ears corn, cut in half
1 1/2 pounds large shrimp
Combine water, hot sauce, Worcestershire, celery, carrot, onion, garlic, crab boil, peppercorns, lemon juice, seafood seasoning, cayenne pepper, bay leaves and salt in a large saucepan. Bring mixture to a boil, add potatoes and corn, reduce heat and simmer 5 minutes. Don't let liquid reduce too much. Add shrimp and simmer 1 to 2 minutes till done. Drain and serve hot. 6 servings

my girlfriend gave me this recipe.
peeled deveined shrimp
sliced bell peppers
sliced onions
garlic
red peppers
saute onion, peppers, garlic and red pepper in olive oil or butter. add shrimp and cook until pink
cook pasta of choice and mix w/ shrimp.
I was thinking brocoli would be a good addition to this.

Thanks amayesing; that sounds really good and best of all a quick meal! Here's another one I recently came across, makes a good quick lunch!
Carolina Shrimp Salad
3/4 cup hot mustard
hot pepper sauce to taste
1 bell pepper, diced
3/4 cup salad oil
3 green onions, chopped
1/4 cup ketsup
2 to 3 pounds shrimp, cleaned and cooked
1/2 cup vinegar
Combine all ingredients and chill. Good as a appetizer or on lettuce as a salad or as an entree. 8 servings

I just prepared a shrimp dish today. I found it in the new Hungry Girl 200 under 200 cookbook. I was recently put on a diet by my doctor due to high triglycerides so I'm trying to eat differently.
Bacon-Bundled BBQ Shrimp
Ingredients:
16 large (not jumbo) raw shrimp, peeled, deveined, tails removed
8 slices extra-lean turkey bacon, halved widthwise
1/3 cup canned tomato sauce
3 tablespoons ketchup
1 tablespoon brown sugar (not packed)
1 tablespoon cider vinegar
1/2 teaspoon garlic powder
Directions:
Preheat oven to 425 degrees.
In a small bowl, combine tomato sauce, ketchup, sugar, vinegar, and garlic powder until mixed well. Set aside.
Lightly spray a baking sheet with nonstick spray. Take 1/2 slice bacon and coat it in the sauce. Wrap the sauce-covered bacon around a shrimp and place it, seam side down, on the baking sheet. Repeat with the rest of the bacon and shrimp. Give them a quick mist with nonstick spray.
Bake in the oven until shrimp are cooked through and bacon is crispy, 10 to 15 minutes.
Makes 4 servings

Sounds good, thanks for sharing! Triglycerides is the same problem my DH has. He is on meds and controls his diet very strictly, but continues to have the problem. Doctor says that is his "family flaw". All his brothers and sisiters and aunts and uncles on that side have the same problem. No one control the numbers very well. DH has been on the strict diet since the eary 80's. So much he just can't plain eat! LOL The recipe above he couldn't have because of the bacon. I save recipes like ones he can't eat for when we have company and then I get to try them!

If you buy the individually-quick-frozen scallops and cooked shrimp, and defrost the seafood in cold water, this dinner is done in the time it takes to cook your pasta!
This is an original recipe--my own!
1/2 lb EACH bay scallops and cooked shrimp (tails off)
1 can (14 oz) diced tomatoes
1/4 cup white wine
olive oil for the pan
2 cloves garlic, minced
1/2 tsp basil
1/4 tsp oregano
pinch red pepper flakes
Heat oil in pan and cook garlic for 2 minutes. Add all remaining ingredients EXCEPT scallops and shrimp. When sauce comes to a boil, add seafood and cook just until it is heated through.
Serve over linguine.

2 TSP olive oil
1 cup EACH chopped onion & bell pepper
1 1/2 cups chicken broth
2 TBL EACH minced garlic & lemon juice
3 TBL sherry or water mixed with 2 TSP flour
1/4 TSP EACH paprika, salt & pepper
1 1/2 LB frozen peeled large shrimp, thawed
Get the rice going before you start on this dish. It cooks quickly!
Heat oil in large nonstick skillet. Add onion & pepper; saute 4 minutes. Stir in remaining ingredients except shrimp; bring to simmer & cook 2 minutes.
Add shrimp & cook 2 minutes until cooked through.
Serve over rice. Serves 4.

Pinch of saffron
2 ounces boiling water
olive oil for the pan
1 small onion, chopped really fine
1 tsp minced garlic (from a jar)
2 1/4 cups arborio rice (a 14-oz pkg)
1/2 cup dry white wine
Up to 8 cups stock (I used chicken stock; original recipe called for fish stock)
2 cups cooked, frozen shrimp (thawed and tails removed)
1 cup frozen peas
2 tbl grated parmesan
2 tbl butter
1 tbl fresh parsley, snipped (or 2 tbl dried parsley)
Fresh ground pepper to taste
Add saffron to the boiling water. Press with a spoon to release the color and flavor. Set aside.
Saute onion in the olive oil until almost translucent. Stir in garlic.
Stir in the rice until coated.
Add white wine and stir a minute.
Add stock, a cup or so at a time, stirring, and allow to simmer until the liquid is almost absorbed. Add more stock until the rice becomes creamy.
Add saffron (and water), shrimp and peas. Stir and cook until everything is hot.
Stir in butter, parmesan and parsley.
Season to taste with fresh ground pepper.

This makes plenty! It's a one-pot meal, is great to use up leftovers, and it tastes like you fussed.
4 cups cooled, cooked rice
1 onion, chopped fine
2 tbl minced garlic
1 to 2 cups frozen vegetables (anything works as long as it's in small pieces)
2 cups cooked "salad" shrimp (any cooked meat can be used)
Soy sauce to taste
Olive oil for the pan
A little sesame oil to finish
Saute the onion in olive oil in a large skillet. Add rice, garlic and vegetables. Cook until everything is hot. Stir in soy sauce. Add shrimp and cook, stirring, until heated through. Drizzle a little sesame oil over the top, stir in, and serve.
For a treat, serve with fortune cookies.
:) This is a family favorite I have posted on several other forums.
Cilantro Shrimp with Lime Butter Baste
20 Extra large shell-on shrimp, peeled and deveined w/tail intact
Lime Butter Baste
4 Tbs. unsalted butter
2 tsp. fresh lime juice
8 springs minced fresh cilantro
1/8 tsp. crushed red pepper / cayenne
Kosher salt & white pepper to taste
Rinse & dry shrimp. Can skewer at this point, stabilizing by inserting one skewer through head of shrimp and another above tail and repeating. Or you can arrange shrimp on a foil covered broiling pan sprayed with cooking spray. Combine baste ingredients and melt in microwave; preheat grill or broiler to high. Reserving 1 Tb. baste, brush remaining baste on shrimp. Grill or broil (top rack position) about 1 1/2 - 2 min per side, or until pink opaque. Remove shrimp to a platter and brush with remaining baste. Enjoy!!

From a Michele Urvater cookbook, The Monday to Friday Cookbook. This is one of the first cookbooks we had when we got married and the recipes give a lot of variations--kind of like what Rachael Ray does. Using this cookbook gave me confidence in the kitchen. This dish is really delicious and very fresh-tasting.
I don't make this recipe exactly as the author wrote it, so here is what I did:
RAINBOW STIR FRY (4 servings)
1 pound shrimp, peeled and deveined
2 bell peppers, cut in chunks (get different colors if possible, it makes the dish look prettier!)
1/2 cup frozen peas (don't need to thaw)
1 small-to-medium onion, chopped
1 tbl minced garlic
2 tbl lemon juice
salt
olive oil for the pan
Heat the oil in the pan and stir-fry the peppers, peas and onion for about 4 minutes. Add garlic and lemon juice and cook 2 more minutes. Add shrimp, stir-frying until the shrimp is cooked. Salt to taste and serve over rice.
This recipe cooks quickly, so start the rice before you put anything in the pan! If you have it all chopped ahead of time, you're probably looking at about 10 minutes total cook time.
